{"id":58136,"date":"2021-07-29T10:21:02","date_gmt":"2021-07-29T08:21:02","guid":{"rendered":"https:\/\/gastronomicament.cat\/el-porc-negre-la-cabra-i-lovella-de-mallorca-i-lovella-de-menorca-son-segell-raca-autoctona-100"},"modified":"2021-07-29T10:21:02","modified_gmt":"2021-07-29T08:21:02","slug":"el-porc-negre-la-cabra-i-lovella-de-mallorca-i-lovella-de-menorca-son-segell-raca-autoctona-100","status":"publish","type":"post","link":"https:\/\/gastronomicament.cat\/en\/el-porc-negre-la-cabra-i-lovella-de-mallorca-i-lovella-de-menorca-son-segell-raca-autoctona-100","title":{"rendered":"El porc negre, la cabra i l&#8217;ovella de Mallorca i l&#8217;ovella de Menorca s\u00f3n segell Ra\u00e7a aut\u00f2ctona 100%"},"content":{"rendered":"<p>La conselleria d\u2019Agricultura, Pesca i Alimentaci\u00f3, a trav\u00e9s de Serveis de Millora Agr\u00e0ria i Pesquera (SEMILLA)\u00a0ha coordinat amb les diferents associacions el sistema que permet garantir la puresa racial de la carn, llet, embotits i productes lactis identificats amb el logotip.<\/p>\n<p>D&#8217;aquesta manera, els productes de porc negre mallorqu\u00ed, la cabra mallorquina, l\u2019ovella mallorquina i l\u2019ovella menorquina poden utilitzar ja el segell\u00a0<strong>Ra\u00e7a aut\u00f2ctona 100%<\/strong>, un logotip per identificar les carns i els productes derivats d\u2019aquests animals.<\/p>\n<p>Amb aquest segell els consumidors tenen\u00a0<strong>una identificaci\u00f3 espec\u00edfica dels productes procedents de races aut\u00f2ctones<\/strong>. Es tracta de gen\u00e8tiques \u00faniques, conservades pels ramaders d\u2019aquesta terra i criats en condicions mediterr\u00e0nies de producci\u00f3, en un clar exemple de producci\u00f3 sostenible.<\/p>\n<p>Amb l\u2019autoritzaci\u00f3 d\u2019aquestes quatre races, les Balears ja en tenen 6 perqu\u00e8 anteriorment s&#8217;hi varen incloure la vaca menorquina i, posteriorment, l\u2019ovella roja mallorquina. D&#8217;aquesta manera, es respon, per una banda, a una demanda del sector ramader, la protecci\u00f3 de les races aut\u00f2ctones i, per una altra, a una exig\u00e8ncia social i dels consumidors, tenir garanties del que es compra. El segell ser\u00e0 visible a l&#8217;etiquetatge dels productes i tamb\u00e9 als punts de venda o consum d\u2019aquests.<\/p>\n<p>Actualment, SEMILLA treballa en l\u2019autoritzaci\u00f3 del segell Ra\u00e7a aut\u00f2ctona 100% pels productes de vaca mallorquina i coordina amb les diferents associacions un Projecte Pilot presentat al Fons de Garantia Agr\u00e0ria i Pesquera (FOGAIBA) per donar suport al desenvolupament dels nous productes, pr\u00e0ctiques, processos i tecnologies que suposa la implementaci\u00f3 del nou segell.<\/p>\n<p><strong>Porc negre mallorqu\u00ed<br \/>\n<\/strong>Aquesta ra\u00e7a porcina es troba distribu\u00efda per tota Mallorca. La zona amb m\u00e9s pres\u00e8ncia de porc negre mallorqu\u00ed \u00e9s la del sud-est de l\u2019illa, amb el 60% de les explotacions. Fins a la primera meitat del segle XX pr\u00e0cticament era l\u2019\u00fanica ra\u00e7a porcina de l\u2019illa. Es tracta d\u2019animals generalment d\u2019un color gris tonalitat pissarra, amb el coll curt i musculat amb un parell de mamelles grans, caracter\u00edstica t\u00edpica d\u2019aquesta ra\u00e7a. El porc negre mallorqu\u00ed \u00e9s una ra\u00e7a en perill d\u2019extinci\u00f3 que es conserva per la seva utilitzaci\u00f3 en productes de qualitat, principalment la sobrassada de Mallorca de Porc Negre, reconeguda amb una Indicaci\u00f3 Geogr\u00e0fica Protegida (IGP) i la porcella de Porc Negre Mallorqu\u00ed, reconeguda com a Aliment Tradicional de les Illes Balears.<\/p>\n<p>Aquestes s\u00f3n les caracter\u00edstiques de les quatre races incorporades al segell:<\/p>\n<p><strong>Cabra mallorquina<br \/>\n<\/strong>Aquesta ra\u00e7a caprina es troba sobretot a la zona de muntanya de Mallorca: la Serra de Tramuntana i la de Llevant. \u00c9s una ra\u00e7a ben adaptada a les condicions clim\u00e0tiques t\u00edpiques de l\u2019illa i a l\u2019orografia. El sistema de producci\u00f3 \u00e9s l\u2019extensiu i s\u2019organitzen en ramats petits, que ocupen diverses hect\u00e0rees en funci\u00f3 de la disponibilitat de l\u2019aigua i les pastures. Realitzen una neteja de sotabosc, vital per a la neteja dels boscs i tamb\u00e9 disseminen les llavors de la flora.<\/p>\n<p><strong>Ovella mallorquina<br \/>\n<\/strong>Aquesta ra\u00e7a ovina es troba sobretot a la zona sud de Mallorca i el sistema d\u2019explotaci\u00f3 majoritari \u00e9s l\u2019extensiu amb l\u2019aprofitament dels recursos naturals. El xot pasqual i l\u2019anyell de llet s\u00f3n, ara per ara, les principals produccions d\u2019aquesta ra\u00e7a. L&#8217;alimentaci\u00f3 dels animals, a causa del seu r\u00e8gim d&#8217;explotaci\u00f3, \u00e9s la lact\u00e0ncia materna i l&#8217;aprofitament dels recursos de les explotacions.<\/p>\n<p><strong>Ovella menorquina<br \/>\n<\/strong>Aquesta ra\u00e7a ovina \u00e9s la que millor s\u2019adapta al clima i a l\u2019orografia de Menorca amb per\u00edodes de sequera i de manca d\u2019aliments. A m\u00e9s, \u00e9s una ra\u00e7a que pot botar les t\u00edpiques parets de pedra que divideixen els camps menorquins.
