L\u2019escriptor\u00a0<strong>Michael Rhulman\u00a0<\/strong>resumeix de manera excel\u00b7lent el seu valor en aquest fragment del seu llibre dedicat a l\u2019ou: \u201c<strong>El m\u00e9s gran de tots els nostres aliments: l\u2019ou combina bellesa, eleg\u00e0ncia i senzillesa<\/strong>, un miracle del disseny de la Natura i, com a aliment, un bot\u00ed. Els ous, que contenen tots els nutrients necessaris per a crear vida, ofereixen al nostre organisme una potent combinaci\u00f3 de prote\u00efnes, amino\u00e0cids, \u00e0cids grassos, antioxidants, minerals i vitamines, una combinaci\u00f3 que cap altre aliment pot igualar.\u201d<\/p>\n<p>El fet que el Dia Mundial de l\u2019Ou se celebri arreu del m\u00f3n \u00e9s indicatiu de la universalitat d\u2019aquest aliment, que est\u00e0 present a la cultura gastron\u00f2mica de quasi tots els pobles del planeta. En efecte, l\u2019ou protagonitza un gran nombre de plats de tot el m\u00f3n amb arrels molt profundes en les tradicions culin\u00e0ries i que tenen una gran significaci\u00f3 social per a cultures molt diverses. La seva versatilitat fa que estigui present a les preparacions m\u00e9s senzilles i a les m\u00e9s sofisticades.<\/p>\n<p>Des de\u00a0<strong>la Federaci\u00f3 Av\u00edcola Catalana celebra el Dia Mundial de l\u2019Ou distingint sis especialitats elaborades amb ous<\/strong>\u00a0que s\u00f3n aut\u00e8ntics referents a les seves respectives cultures i que, de vegades, traspassen les fronteres pol\u00edtiques i socials creant lligams entre pobles molt diversos.<\/p>\n<p><strong>Shaksuka<\/strong><\/p>\n<p>El shaksuka \u00e9s un plat que s\u2019elabora amb ous escalfats en una salsa a base de tom\u00e0quet. El seu nom prov\u00e9 de l\u2019\u00e0rab i significa \u201cbarreja\u201d. Es creu originari del Iemen o de l&#8217;Imperi Otom\u00e0 i ha perviscut a la cuina d\u2019un bon nombre de cultures estant present, amb variacions, als pobles del Magreb i de l\u2019Orient Mitj\u00e0. \u00c9s una especialitat compartida per les cultures d\u2019origen \u00e0rab i pel poble jueu, essent un dels plats m\u00e9s populars de la seva cuina.<\/p>\n<p><strong>Full English Breakfast <\/strong><\/p>\n<p>Un dels llegats m\u00e9s importants de l&#8217;imperi brit\u00e0nic \u00e9s el seu desdejuni, que els anglesos van exportar com a part de la cultura anglosaxona. Des dels Estats Units fins a Austr\u00e0lia, un esmorzar no \u00e9s tal si no cont\u00e9 una generosa raci\u00f3 d&#8217;ous, escalfats, remenats, passats per aigua o ferrats. Tal \u00e9s el valor que aquesta cultura dona a l\u2019ou com a aliment imprescindible per al primer \u2013i m\u00e9s abundant\u2013 \u00e0pat del dia.<\/p>\n<p><strong>Ous dels cent anys<\/strong><\/p>\n<p>Qui hagi tastat mai els ous dels cent anys xinesos de ben segur no oblidar\u00e0 mai l\u2019experi\u00e8ncia.\u00a0Sense dubte, aquesta especialitat, que tamb\u00e9 s\u2019anomena\u00a0<em>ous centenaris<\/em>\u00a0\u00e9s un aliment amb gust adquirit. \u00c9s originari de la Xina i s\u2019elabora amb ous d&#8217;\u00e0nec, pollastre o guatlla que es conserven en una barreja d&#8217;argila, cendra, sal, cal\u00e7 viva i closques d&#8217;arr\u00f2s durant un per\u00edode de temps que pot anar de diverses setmanes a uns quants mesos. Aquesta t\u00e8cnica, que es va crear per a preservar els ous durant les \u00e8poques d&#8217;abund\u00e0ncia, produeix canvis en la textura, el color i l\u2019aroma de l\u2019ou, que adquireix un gust intens i molt particular. Els\u00a0<em>ous dels cent anys<\/em>\u00a0es consideren una menja molt especial a la Xina, sovint s\u00f3n el primer plat dels banquets de noces i a les cases s&#8217;ofereixen als convidats com a forma d&#8217;afalac, especialment durant l&#8217;Any Nou xin\u00e8s.<\/p>\n<p><strong>Truita de patata<\/strong><\/p>\n<p>Amb ceba o sense ceba, la truita de patata \u00e9s un referent de la cuina d\u2019Espanya i un dels seus plats m\u00e9s coneguts internacionalment, amb el nom de\u00a0<em>tortilla espa\u00f1ola<\/em>. Per a ser tan famosa, \u00e9s una especialitat relativament moderna que s\u2019elabora amb un ingredient del Nou M\u00f3n, la patata. El seu origen se situa a la poblaci\u00f3 extremenya de Villanueva de la Serena, on a finals del segle XVIII es preparava una barreja d\u2019ou i patata com a aliment econ\u00f2mic i nutritiu per a combatre la fam que es patia a Europa en aquella \u00e8poca. Avui, la truita de patata est\u00e0 introdu\u00efda a tot Espanya i \u00e9s l\u2019especialitat estrella de les tapes en els bars, dels p\u00edcnics en fam\u00edlia i dels \u00e0pats informals.<\/p>\n<p><strong>Doro wat<\/strong><\/p>\n<p>El plat nacional d\u2019Eti\u00f2pia \u00e9s un estofat picant de pollastre i ous durs que s\u2019anomena\u00a0<em>doro wat<\/em>. El seu origen \u00e9s molt antic i tamb\u00e9 est\u00e0 present en gran part de la banya d&#8217;\u00c0frica, bressol de la Humanitat. En el cas d\u2019Eti\u00f2pia, aquesta especialitat t\u00e9 un car\u00e0cter transversal, ja que gaireb\u00e9 totes les tribus i religions l\u2019han incorporat a la seva cuina i els seus costums. El\u00a0<em>doro wat<\/em>\u00a0es menja sovint en el dia a dia de forma comunal, normalment en dies festius i els cristians el fan sempre per Setmana Santa, per a trencar el dejuni de la Quaresma.<\/p>\n<p><strong>Tamagoyaki<\/strong><\/p>\n<p>La capsa Bento \u00e9s el nom que rep la carmanyola que els japonesos porten cada dia a la feina i a l\u2019escola amb el seu dinar, i que \u00e9s famosa internacionalment per les sofisticades elaboracions i la delicadesa i originalitat amb qu\u00e8 s\u2019hi disposen els aliments. Un element que no sol faltar a les capses Bento \u00e9s la tradicional truita japonesa, el\u00a0<em>tamagoyaki<\/em>, similar a la truita francesa i que pot ser salada o dol\u00e7a. Es couen els ous batuts fent una fina l\u00e0mina en una paella rectangular i abans d\u2019enretirar-la s\u2019enrotlla formant un cilindre aplanat. Un cop feta es talla en porcions iguals.
