{"id":59798,"date":"2020-10-08T09:17:15","date_gmt":"2020-10-08T07:17:15","guid":{"rendered":"https:\/\/gastronomicament.cat\/andreu-genestra-trasllada-els-arbres-a-la-cuina"},"modified":"2020-10-08T09:17:15","modified_gmt":"2020-10-08T07:17:15","slug":"andreu-genestra-trasllada-els-arbres-a-la-cuina","status":"publish","type":"post","link":"https:\/\/gastronomicament.cat\/en\/andreu-genestra-trasllada-els-arbres-a-la-cuina","title":{"rendered":"Andreu Genestra trasllada els arbres a la cuina"},"content":{"rendered":"<p>El cuiner<strong>\u00a0Andreu Genestra<\/strong>\u00a0participa aquesta setmana en el\u00a0<strong>congr\u00e9s San Sebasti\u00e1n Gastronomika<\/strong>, que enguany se celebra virtualment.<\/p>\n<p>El cuiner d&#8217;Inca va oferir dimarts una pon\u00e8ncia titulada &#8216;<strong>Els arbres com a aliment<\/strong>&#8216; i avui dijous n&#8217;oferir\u00e0 una altra sobre\u00a0<strong>la mortificaci\u00f3 a la cuina<\/strong>, en la qual mostrar\u00e0 com entendrir\u00a0carn i peix a trav\u00e9s del receptari. La podeu seguir en directe a:\u00a0<a rel=\"nofollow\" href=\"http:\/\/www.sansebastiangastronomika.com\/\">www.sansebastiangastronomika.com<\/a><\/p>\n<p>Genestra va explicar dimarts a la cuina del restaurant\u00a0<strong>Mugaritz\u00a0<\/strong>-on va fer una estada de pr\u00e0ctiques i on reconeix que va comen\u00e7ar a concebre el seu restaurant- que el producte de quil\u00f2metre va m\u00e9s enll\u00e0 dels productors locals i que inclou tot all\u00f2 que ens envolta, com per exemple els arbrers\u00a0i, en el seu cas, els que hi ha al seu restaurant de Son Jaumell.<\/p>\n<p>D&#8217;aquesta manera va explicar com ha traslladat al plat arbrers\u00a0com el garrover, el xiprer, el noguer, el pi i la figuera com a snacks del seu men\u00fa de degustaci\u00f3.<\/p>\n<p><strong>Garrover<\/strong><\/p>\n<p>La garrova ja era un dels aliments apreciats pels romans ja que tenen un alt poder gluc\u00e8mic i cal\u00f2ric. Andreu Genestra va explicar que de la farina de garrova n&#8217;han fet una torrada i, a sobre, hi han posat una\u00a0<strong>crema feta amb la polpa de la garrova<\/strong>\u00a0que es complementa amb\u00a0<em>chimichurri\u00a0<\/em>i amb blat de moro assecat amb sal. &#8220;Ara no n&#8217;\u00e9s el temps, per\u00f2 si hi hagu\u00e9s fulles tendres de garrover, les usar\u00edem per acabar aquesta elaboraci\u00f3: primer els donar\u00edem un bull i despr\u00e9s les fregir\u00edem\u00a0una mica amb oli&#8221;, va explicar el cuiner.<\/p>\n<p><strong>Xiprer<\/strong><\/p>\n<p>El xiprer \u00e9s un altre dels arbres\u00a0que hi ha a Son Jaumell.\u00a0D<strong>e les bolles de xiprer en va fer una melassa\u00a0<\/strong>que acompanya a una pasta de robiol i a una<strong>\u00a0glac\u00e9 de carabassa<\/strong>. Per acabar, hi posa una mica de pur\u00e9 de colflori i ratlladura de bolles verdes de xiprer.<\/p>\n<p><strong>Noguer<\/strong><\/p>\n<p>Per al noguer, Genestra va fer una crema de nous, a la qual hi va afegir els\u00a0<strong>l\u00edquens\u00a0<\/strong>que viuen a l&#8217;escor\u00e7a d&#8217;aquest arbre. Primer els va fregir i despr\u00e9s les va combinar amb herbes arom\u00e0tiques de la zona i en va fer una pols. L&#8217;aperitiu es complementa amb\u00a0<strong>una nou verda\u00a0<\/strong>que es va rentar tres vegades amb aigua i sal i que per acabar de llevar-li l&#8217;amargor, es cuina en alm\u00edvar durant 4 hores i, posteriorment, ha reposat entre 40 i 60 dies. Per finalitzar la mossegada, hi va posar llavor de mostassa i pebre envinagrat.<\/p>\n<p><strong>Pi<\/strong><\/p>\n<p>El cuiner d&#8217;Inca va explicar que els romans feien servir l&#8217;<strong>escor\u00e7a del pi\u00a0<\/strong>per fer tintures,\u00a0ja que \u00e9s rica en tanins, els quals afavoreixen la fixaci\u00f3 del colorant sobre la tela. Genestra, en aquest cas, n&#8217;usa la m\u00e9s prima i tendra que ultracou i\u00a0<strong>en fa una pols que servir\u00e0 per recobrir un bomb\u00f3 l\u00edquid d&#8217;amanida c\u00e8sar<\/strong>, al qual hi aporta un toc fresc amb una\u00a0<em>cr\u00e8me fra\u00eeche<\/em>.<\/p>\n<p><strong>Figuera<\/strong><\/p>\n<p>Andreu Genestra va fer refer\u00e8ncia a la figuera com un arbre que malauradament\u00a0ha caigut en l&#8217;oblit, per\u00f2 que espera que es recuperi, especialment amb iniciatives com Son Mut, el camp experimental de figueres m\u00e9s gran del m\u00f3n, obra de\u00a0<strong>Montserrat Pons i Boscana<\/strong>. Un arbre que antigament va ser molt apreciat pel valor nutritiu de les figues per grecs, fenicis, romans i tamb\u00e9 pels catalanoaragonesos. Genestra en va elaborar\u00a0<strong>una sobrassada de figa<\/strong>, amb el pebre bord de la varietat Tap de Quart\u00ed, sal i pebre bo.
