El<a href=\"https:\/\/gastronomicament.cat\/en\/restaurant\/clandesti\">\u00a0restaurant Clandest\u00ed de Palma<\/a>\u00a0(carrer de Guillem Massot, 45) acull la jornada Quatre barres &#8211; Quatre illes el proper 1 de mar\u00e7, de 12.30 a 20.30 hores. Una cita gastron\u00f2mica que permet con\u00e8ixer i tastar la cuina d&#8217;autor i de barra de 4 restaurants destacats de les Illes Balears<\/p>\n<p>La cita, organitzada per Tres Serveis Culturals i\u00a0 Ajonegro, convidar\u00e0 a tastar la cuina dels restaurants\u00a0<strong>Ses Forquilles<\/strong>\u00a0de\u00a0<strong>Menorca<\/strong>;\u00a0<strong>Es Mar\u00e8s<\/strong>, de\u00a0<strong>Formentera\u00a0<\/strong>i\u00a0<strong>Re.art<\/strong>\u00a0d&#8217;<strong>Eivissa<\/strong>, a m\u00e9s de la del <strong>Clandest\u00ed\u00a0<\/strong>de\u00a0<strong>Mallorca<\/strong>. Cada un d&#8217;aquests establiments oferir\u00e0 dues tapes vinculades a productes i receptes de la seva illa.<\/p>\n<ul>\n<li><strong>Pau Navarro<\/strong>i\u00a0<strong>Ariadna Salvador<\/strong>, del restaurant Clandest\u00ed, oferiran una\u00a0<em>banderilla\u00a0<\/em>de llengua de vedella amb t\u00e0peres i la seva versi\u00f3 de la fava parada.<\/li>\n<li><strong>Oriol Castell<\/strong>i\u00a0<strong>Marco Antonio Collado<\/strong>, de Ses Forquilles, faran un panet al vapor amb caldera de morena i\u00a0<em>unagi\u00a0<\/em>\u00a0(salsa japonesa que recorda a un fumet) i una l\u00e0mina de vaca menorquina curada amb sal i acompanyada d&#8217;envinagrats de Menorca.<\/li>\n<li><strong>Jaume Boluda<\/strong>, d&#8217;Es Mar\u00e8s, cuinar\u00e0 bunyols de peix sec i cabrit a la\u00a0<em>royale\u00a0<\/em>amb salsa de figues seques.<\/li>\n<li><strong>David Reartes<\/strong>, de Re.art, aportar\u00e0 un mel\u00f3s de coll de porc negre amb salsa cantonesa, garum i crumble coent (tipus tataki), i unes torrades de garrova amb Tarama de gerret i col fermentada.<\/li>\n<\/ul>\n<p>Els cuiners seran els encarregats de servir, personalment i ininterrompudament les tapes de les 12.30 a les 20.30 hores.
