Es diu Bretxa i es troba a Palma, concretament al Passeig Mallorca. El local est\u00e0 especialitzat en tapes i barquetes. D&#8217;entre les calentes, hi trobareu el canel\u00f3 de coa de vedella sobre coca de patata i confitura d&#8217;albercocs secs de Porreres, el bacall\u00e0 confitat amb escuma de patata i vermell d&#8217;ou curat, entre altres.<\/p>\n<p>Tamb\u00e9 n&#8217;hi ha de fredes, com la terrina de foie amb shitake escabetxat sobre teula de blat de moro torrat o la coca cruixent de presa en escabetxo, formatge blau i peres en alm\u00edvar de camamil\u00b7la. A m\u00e9s, hi podreu assaborir propostes m\u00e9s senzilles com el formatge Idiaz\u00e1bal, el pernil ib\u00e8ric tallat a m\u00e0, truites i gildas, ideals per acompanyar un bon vermut.<\/p>\n<p>No hi falten plats per compartir com els calamarins farcits en la seva tinta amb arr\u00f2s cruixent i pebre verd torrat o els peus de porc negre a la planxa amb humus trufat i anelles de ceba.<\/p>\n<p><strong>Un cuiner basc a Mallorca<\/strong><\/p>\n<p>Igor Rodr\u00edguez Sanz va n\u00e9ixer a Guip\u00fascoa l&#8217;any 1977. Es va formar a l&#8217;Escola de Cuina de Sant Sebasti\u00e0. De fet, el mercat d&#8217;aquesta ciutat, Donostia, es coneix com la Bretxa, per les bretxes que feren a la murada les tropes del duc de Berwik al segle XVIII quan va assaltar la ciutat. Un segle despr\u00e9s,\u00a0els soldats angloportuguesos la tornaren a prendre per aquest mateix lloc durant les guerres napole\u00f2niques. Rodr\u00edguez arrib\u00e0 a Mallorca l&#8217;any 1996 per fer pr\u00e0ctiques al restaurant Koldo Royo.
