La creativitat i la innovaci\u00f3 s\u00f3n els criteris principals a l\u2019hora de plantejar els diferents estils i tipologies de cerveses i \u00e9s per aix\u00f2 que, mantenint aquesta l\u00ednia, la segona creaci\u00f3 dins d\u2019aquest projecte ha volgut unir dos elements, el pa i la cervesa, que destaquen per les coincid\u00e8ncies en els seus ingredients i proc\u00e9s d\u2019elaboraci\u00f3.<\/p>\n<p>En aquesta ocasi\u00f3, amb la Moritz Blat s\u2019ha recuperat l&#8217;elaboraci\u00f3 de cervesa amb els llevats salvatges gelosament guardats a la massa mare del pa. En col\u00b7laboraci\u00f3 amb Triticum, fleques (forns) d\u2019alta gastronomia, s\u2019ha buscat la millor massa mare per crear aquesta nova cervesa.<\/p>\n<p>Amb la seva fermentaci\u00f3 s\u2019ha aconseguit despertar aromes mil\u00b7len\u00e0ries sorprenents que combinen amb dol\u00e7or i una acidesa refrescant.<br \/>\n<strong>La MORITZ BLAT \u00e9s una cervesa molt t\u00e8rbola que se serveix sense filtrar i sense pasteuritzar.<\/strong>Aquesta cervesa t\u00e9 5,8 graus i nom\u00e9s est\u00e0 a la venda a la F\u00e0brica Moritz de Barcelona.<\/p>\n<p>Densa i refrescant alhora, \u00e9s una proposta \u00fanica, ideal per a l&#8217;estiu. \u00c9s una cervesa d\u2019estil Antik Weissbier, amb 12\u00ba IBUS d\u2019amargor i 5,8% d\u2019alcohol. Una escuma densa, generosa i adherent atrapa intenses notes afruitades dels llevats (banana madura) i especiades (clau, an\u00eds estrellat) que s&#8217;enreden amb les aromes florals del ll\u00fapol de Saaz. Elaborada amb aigua mineral Font d\u2019Or, es percep una sensaci\u00f3 en boca cremosa que acaba amb un efecte efervescent molt refrescant a causa de l&#8217;alta carbonataci\u00f3 d&#8217;aquest estil.<\/p>\n<p><strong>Triticum<\/strong><br \/>\nTriticum va n\u00e9ixer el 2006 amb l\u2019\u00fanica i senzilla ra\u00f3 de fer pa de qualitat per l\u2019hostaleria i la restauraci\u00f3. Xevi Ramon, el seu fundador, \u00e9s Mestre Artes\u00e0 Alimentari amb una extensa formaci\u00f3 acad\u00e8mica i en els millors obradors nacionals i internacionals, com tamb\u00e9 professor en escoles de fleca (forners).<\/p>\n<p>Triticum revoluciona el mercat tornant als or\u00edgens d\u2019aquest producte i combinant les \u00faltimes tend\u00e8ncies en maquin\u00e0ria amb els processos artesans; ha recuperat l\u2019ess\u00e8ncia artesana d\u2019un producte mil\u00b7lenari a partir de les \u00faltimes t\u00e8cniques en panificaci\u00f3, sent capa\u00e7 de satisfer els paladars m\u00e9s exigents i ofereix l\u2019equilibri perfecte entre qualitat, regularitat, bon servei i professionalitat.<\/p>\n<p>L\u2019any 2012 Triticum fa un pas endavant i obre dos punts de venda pel gran p\u00fablic, Juliette i Triticum by Moritz a la F\u00e0brica Moritz Barcelona. <!--more--><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Despr\u00e9s de la Red IPA, Moritz presenta la segona especialitat desenvolupada dins del projecte Moritz Beer Lab: La Moritz Blat, el pa fet cervesa.
