Per aix\u00f2, la popular empresa mallorquina ha comen\u00e7at a recollir-los per posteriorment assecar-los i moldre&#8217;ls. \u00c9s l&#8217;ingredient m\u00e9s t\u00edpic de la <strong>sobrassada<\/strong>, que recullen els treballadors complint estrictes controls de qualitat. De fet, la m\u00e0 d&#8217;obra s&#8217;ha duplicat i a Especias Cresp\u00ed compten amb quatre treballadors m\u00e9s que pertanyen a ASPAS, Associaci\u00f3 de Pares con Persones amb Discapacitat Auditiva.<\/p>\n<p><strong>Quasi desapareix<\/strong><br \/>\nMolts desconeixen que el pebre bord tap de cort\u00ed va estar a punt de desapar\u00e8ixer als anys 90 perqu\u00e8 la collita no era suficient per proveir el mercat, de manera que es va\u00a0 comen\u00e7ar a importar pebre bord de M\u00farcia. La pintoresca estampa dels pebres de tap de cort\u00ed assecant-se al sol anava desapareixent, any rere any, dels pobles de Mallorca.<\/p>\n<blockquote><p>JUAN VELASCO, GERENT D&#8217;ESPECIAS CRESP\u00cd: &#8220;EL NOSTRE ESFOR\u00c7 SE CENTRA A RECUPERAR AQUEST PRODUCTE TAN VALU\u00d3S PER A LA GASTRONOMIA MALLORQUINA&#8221;<\/p><\/blockquote>\n<p>Quaranta anys despr\u00e9s, la recuperaci\u00f3 del pebre bord mallorqu\u00ed \u00e9s tot un desafiament per a agricultors i productors com Juan Velasco, gerent de <a title=\"Especias Cresp\u00ed\" href=\"http:\/\/gastronomicament.cat\/especias-crespi\">Especias Cresp\u00ed<\/a>: &#8220;El nostre esfor\u00e7, que \u00e9s gaireb\u00e9 una obsessi\u00f3, se centra en recuperar aquest producte tan valu\u00f3s per a la gastronomia mallorquina, molt arrelat a la nostra agricultura tradicional i a la nostra cultura &#8220;. I aquest esfor\u00e7 ha donat fruits, en l&#8217;actualitat la superf\u00edcie d&#8217;aquest cultiu a Mallorca \u00e9s d&#8217;unes 13 hect\u00e0rees, amb una producci\u00f3 d&#8217;unes 330 tones, que representen uns 30.000 quilograms de pebre bord.<\/p>\n<p><strong> Un producte, m\u00faltiples bondats<\/strong><br \/>\nEl preuat tap de cort\u00ed es caracteritza pel color vermell, l&#8217;aroma i el gust dol\u00e7. El pebre bord m\u00f2lt \u00e9s un antioxidant natural que aporta vitamina C, fonamental per a la millor qualitat de la sobrassada i utilitzat en una gran varietat de receptes culin\u00e0ries. El proc\u00e9s per moldre el pebrot \u00e9s artesanal i ecol\u00f2gic. Un cop recollit es selecciona, renten, s&#8217;assequen, se&#8217;ls elimina la cua i es mol i tamisa perqu\u00e8 tot tingui la mateixa mida.<\/p>\n<blockquote><p>EL PEBRE BORD TAP DE CORT\u00cd \u00c9S UN ANTIOXIDANT NATURAL QUE APORTA VITAMINA C<\/p><\/blockquote>\n<p>Segons un <a title=\"CARACTERIZACI\u00d3N MORFOL\u00d3GICA, AGRON\u00d3MICA Y DE CALIDAD DEL PIMIENTO Y PIMENT\u00d3N DE LA VARIEDAD TAP DE CORT\u00cd\" href=\"http:\/\/www.caib.es\/sacmicrofront\/archivopub.do?ctrl=MCRST65ZI138528&amp;id=138528\" target=\"_blank\" rel=\"noopener\">estudi<\/a> realitzat per la <a title=\"Universitat de les Illes Balears\" href=\"http:\/\/www.uib.cat\" target=\"_blank\" rel=\"noopener\">Universitat de les Illes Balears<\/a>, en ser un antioxidant natural, el tap de cort\u00ed cont\u00e9 vitamines C i E i est\u00e0 demostrat que protegeix enfront de malalties com la diabetis o l&#8217;arteriosclerosi.
