{"id":80138,"date":"2022-12-29T09:43:53","date_gmt":"2022-12-29T08:43:53","guid":{"rendered":"https:\/\/gastronomicament.cat\/paret-seca-el-verkami-dels-vins-amb-varietats-locals-dels-paisos-catalans"},"modified":"2022-12-29T09:43:53","modified_gmt":"2022-12-29T08:43:53","slug":"paret-seca-el-verkami-dels-vins-amb-varietats-locals-dels-paisos-catalans","status":"publish","type":"post","link":"https:\/\/gastronomicament.cat\/en\/paret-seca-el-verkami-dels-vins-amb-varietats-locals-dels-paisos-catalans","title":{"rendered":"Paret Seca: el Verkami dels vins amb varietats locals dels Pa\u00efsos Catalans"},"content":{"rendered":"<p>L&#8217;en\u00f2leg\u00a0<strong>Iv\u00e0 Gallego<\/strong>\u00a0\u00e9s el creador de\u00a0<strong>Paret Seca<\/strong>, un projecte nascut tres anys enrere que t\u00e9 com a objectiu\u00a0promoure els\u00a0<strong>vins sense sulfits elaborats amb varietats locals dels Pa\u00efsos Catalans<\/strong>.<\/p>\n<p>Per aquest motiu, Gallego ha creat una campanya de micromecenatge a Verkami, amb l&#8217;objectiu d&#8217;impulsar el seu projecte personal. De la verema passada, la de 2022, far\u00e0 quatre vins amb els quals podr\u00e0 finan\u00e7ar l&#8217;adquisici\u00f3 d&#8217;una parcel\u00b7la de vinya vella en r\u00e8gim de parceria, amb la qual podra tancar el cercle i fer totes les feines que hi ha de la vinya fins a l&#8217;ampolla.<\/p>\n<p>Gallego ha triat el nom de Paret Seca perqu\u00e8 \u00e9s un homenatge al paisatge i territori que, hist\u00f2ricament, ha embolcallat les vinyes. La seva filosofia \u00e9s fer vins de m\u00ednima intervenci\u00f3, sense sulfits, respectant el temps del cultiu. La idea va sorgir en ple confinament. &#8220;Hi vaig comen\u00e7ar a donar forma, despr\u00e9s de treballar d&#8217;en\u00f2leg per altres cellers (C\u00e9rvoles celler, Lagravera, entre d&#8217;altres). Tamb\u00e9 hi afegeix que\u00a0a m\u00e9s d&#8217;elaborar i vendre els vins, el projecte vol fer molta pedagogia per conscienciar sobre una altra manera de cultivar, a m\u00e9s d&#8217;organitzar cursos, fer assessorament vitivin\u00edcoles i &#8220;mirar d&#8217;aconseguir d&#8217;adquirir parcel\u00b7les de vinya vella en r\u00e8gim de parceria que estan pr\u00e0cticament sentenciades per la pressi\u00f3 urban\u00edstica o pels p\u00edrrics preus del ra\u00efm&#8221;.<\/p>\n<p>Les aportacions dels mecenes es destinaran en gran part a les despeses d&#8217;embotellat dels vins de 2022 i a adquirir una parcel\u00b7la de vinya vella al Pened\u00e8s com a amitger (en r\u00e8gim de parceria)<\/p>\n<p>Els vins que far\u00e0 i que podeu ajudar a elaborar s\u00f3n:<\/p>\n<p>El ra\u00efm dels dos\u00a0<strong>vins blancs<\/strong>,\u00a0<strong>Macabeu<\/strong>\u00a0i\u00a0<strong>Xarel\u00b7lo<\/strong>, s\u00f3n del Pened\u00e8s, de dues parcel\u00b7les de la zona d&#8217;Espiells (entre Sant Lloren\u00e7 d&#8217;Hortons, Gelida i Sant Sadurn\u00ed d&#8217;Anoia) propietat de l&#8217;Oriol Roig.
