Aquest 2025, les medalles d&#8217;or han estat per a Ant\u00f2nia Ferriol i Toni Llin\u00e0s.<\/p>\n<p>El lliurament dels reconeixements s&#8217;ha fet en el marc de la reuni\u00f3 anual del consell regulador de la Sobrassada de Mallorca, celebrat el divendres 10 d&#8217;octubre a l&#8217;hotel GPRO Valpara\u00edso de Palma.<\/p>\n<p><strong>Els guardonats de 2025<\/strong><\/p>\n<p>Ant\u00f2nia Ferriol Morey, nascuda a Sineu, filla i n\u00e9ta de mercaders i de dones carnisseres, fa m\u00e9s de 50 anys que es dedica a la Sobrassada de Mallorca. Va entrar molt jove al negoci familiar, va assumir la direcci\u00f3 d&#8217;<strong>Embotits Ferriol<\/strong>, CB despr\u00e9s de la mort de son pare el 1985 i, el 1994, va homologar la f\u00e0brica davant la Comunitat Econ\u00f2mica Europea i va inscriure l&#8217;empresa a la IGP Sobrassada de Mallorca (n\u00fam. 38). Ha donat suport activament al Consell Regulador durant gaireb\u00e9 dues d\u00e8cades com a vocal suplent, i ha impulsat el sector. El 2016 es va jubilar formalment i va donar el relleu al seu fill amb la creaci\u00f3 d&#8217;Embotits Ferriol, SL, encara que continua vinculada com a s\u00f2cia. \u00c9s la primera dona que ha obtingut aquest guard\u00f3 en els 30 anys d&#8217;hist\u00f2ria de la IGP Sobrassada de Mallorca.<\/p>\n<p>Toni Llin\u00e1s va fer la seva traject\u00f2ria al negoci familiar fundat el 1955 i, amb nom\u00e9s 20 anys, ja elaborava sobrassada per als seus clients; el 1976 va crear\u00a0<strong>Productes Carnis de Manacor<\/strong>\u00a0i el 1982 va ampliar els assecadors i hi va incorporar la tecnologia m\u00e9s avan\u00e7ada. Impulsat per la millora cont\u00ednua, va col\u00b7laborar amb el Departament de Qu\u00edmica de la UIB en projectes de R+D i, el 1987, va estendre la comercialitzaci\u00f3 a la pen\u00ednsula, la qual cosa va contribuir al reconeixement de la sobrassada mallorquina. Amb la creaci\u00f3 de la IGP Sobrassada de Mallorca, es va adherir com a elaborador a les dues categories (Sobrassada de Mallorca i de Porc Negre) i va passar a ser membre actiu del Consell Regulador, del qual va ser president entre 1999 i 2000, etapa en qu\u00e8 es va implantar el sistema de qualitat i es va facilitar el relleu posterior a Mateu Castell\u00f3. El 2005 va construir una nova planta a Binissalem dedicada en exclusiva a la sobrassada i, des del 2020, presideix el Comit\u00e8 de Parts del Consell, que garanteix imparcialitat i compliment normatiu.<\/p>\n<p>Durant la reuni\u00f3 de la IGP Sobrassada de Mallorca,\u00a0<strong>Andreu Palou<\/strong>, president d&#8217;aquesta entitat, ha destacat que &#8220;enguany ha comen\u00e7at a funcionar la C\u00e0tedra Sobrassada de Mallorca, la qual ha impulsat dues accions excel\u00b7lents, d&#8217;una banda la Jornada Nous reptes en alimentaci\u00f3, activitat f\u00edsica i salut; i per altra banda, el curs de postgrau en forma de microcredencial universit\u00e0ria, finan\u00e7ada per la Comunitat Europea, sobre alimentaci\u00f3 saludable i an\u00e0lisi sensorial, aplicat a la Sobrassada de Mallorca, en qu\u00e8 s&#8217;han format i acreditat professionals del sector alimentari, especialment els de les principals empreses elaborades europeu&#8221;.<\/p>\n<p>A m\u00e9s a m\u00e9s,\u00a0<strong>Ant\u00f2nia M. Torres<\/strong>, gerent de l&#8217;IGP Sobrassada de Mallorca, i\u00a0<strong>S\u00edlvia Terradas<\/strong>\u00a0han presentat el projecte de revisi\u00f3 del Reglament de Porc Negre Mallorqu\u00ed, un full de ruta orientat a millorar la rendibilitat del sector sense perdre l&#8217;ess\u00e8ncia del producte.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Els productors de sobrassada
