Hi ha una gran varietat de coques de Sant Joan.\u00a0 Aqu\u00ed teniu una\u00a0<strong>recepta de coca de Sant Joan<\/strong>\u00a0feta amb fruita confitada i pinyons.<\/p>\n<h4><strong>Ingredients:<\/strong><\/h4>\n<p><strong>Per fer la massa mare:<\/strong><\/p>\n<ul>\n<li>100 g de farina for\u00e7a<\/li>\n<li>25 g de llevat premsat<\/li>\n<li>Llet (devers 70 cl)<\/li>\n<\/ul>\n<p><strong>Massa brioix:<\/strong><\/p>\n<ul>\n<li>300 grams de farina for\u00e7a<\/li>\n<li>8 grams de llevat premsat<\/li>\n<li>2 ous<\/li>\n<li>8 g de sal<\/li>\n<li>100 g de sucre<\/li>\n<li>100 g de mantega pomada<\/li>\n<li>Dues cullerades d\u2019an\u00eds<\/li>\n<\/ul>\n<p><strong>Per perfumar:<\/strong><\/p>\n<ul>\n<li>Un mica de raspadura de llimona<\/li>\n<li>Vainilla<\/li>\n<li>Canyella en pols<\/li>\n<\/ul>\n<h4><strong>Elaboraci\u00f3:<\/strong><\/h4>\n<p>(\u00e9s la mateixa que la de totes les pastes fermentades)<\/p>\n<p>Primer de tot, dissoleu el llevat premsat amb una mica de llet. Pastau la farina, la sal i el llevat, i incorporau-hi la llet que necessiti fins a adquirir una massa consistent. Guardau-la tapada amb un drap de cot\u00f3 en un lloc on no passi aire i, si pot ser a una temperatura de 35 a 39\u00ba C, fins que hagi doblat el seu volum. Aix\u00f2 pot durar devers 30 minuts.<\/p>\n<p>Quan tingueu la massa mare a punt, dissoleu el llevat en una mica de llet. A continuaci\u00f3 posau-hi el sucre. Tot seguit, afegiu-hi les cullerades d\u2019an\u00eds, la vainilla i la canyella (la quantitat justa per perfumar la pasta). Un cop tingueu tots aquests ingredients ben barrejats, podeu incorporar-hi la farina. Seguidament, abocau-hi els ous mica en mica i al final la mantega feta pomada, fins a adquirir una pasta que no s\u2019enganxi als dits. Llavors podeu incorporar-hi la massa mare.<\/p>\n<p>S\u2019ha de treballar fins a afinar i, per acabar, una mica d\u2019oli perqu\u00e8 no s\u2019enganxi al marbre. Deixau.la reposar devers 15 minuts.<\/p>\n<p>Ara, tallau la pasta en dues parts, feu-ne dues boles i deixau-les reposar 5 minuts.<\/p>\n<p>A continuaci\u00f3 i amb el corr\u00f3 i una mica d\u2019oli al marbre, donau-li forma ovalada i posau-la a la safata del forn. Tot seguit, pintau la coca amb vermell d&#8217;ou i decorau-la amb fruita confitada i pinyons al gust de cadascun. Deixau reposar i llevar la coca a un lloc calent (35-39 \u00b0C) i, com sempre, on no passi aire.
