Reserveu-ne la seua tinta. Talleu un calamar a trossos xicotets i reserveu l&#8217;altre. Saleu ambd\u00f3s. Peleu les fulles exteriors de les carxofes i talleu el cor a quarts. A continuaci\u00f3, talleu dos triangles mitjans del piment\u00f3 per a adornar i talleu-ne la resta en trossos xicotets. Peleu i capoleu la tomaca. Peleu els alls.<\/p>\n<p> En una paella <em>gazpachera <\/em> prou gran escalfeu l&#8217;oli i sofregiu-hi la nyora i els alls i reserveu-ho. En el mateix oli sofregiu.hi, per este orde, piment\u00f3, carxofa i calamar. Reserveu els dos triangles del piment\u00f3. Mentre, piqueu en el morter (o en el got de la batedora), la tomaca, alls, julivert, nyora i un pessic de sal. Afegiu-ho a la paella i sofregiu-ho fins que la tomaca estiga feta. Regueu, llavors, amb el caldo i deixeu-ho coure tot junt, a foc lent, fins que el calamar sencer estiga blanet. (uns 20 minuts). Despr\u00e9s, afegiu-hi l&#8217;arr\u00f2s i la tinta del calamar, mescleu-ho tot b\u00e9, col\u00b7loqueu el calamar en el centre i els triangles del piment\u00f3 reservats pels costats, rectifiqueu de sal si fera falta i deixeu-ho coure a foc mitj\u00e0 uns 20 minuts m\u00e9s.
