{"id":71485,"date":"2014-04-10T23:32:03","date_gmt":"2014-04-10T21:32:03","guid":{"rendered":"https:\/\/gastronomicament.cat\/recepta\/freixura-frit-de-xot"},"modified":"2014-04-10T23:32:03","modified_gmt":"2014-04-10T21:32:03","slug":"freixura-frit-de-xot","status":"publish","type":"recepta","link":"https:\/\/gastronomicament.cat\/en\/recepta\/freixura-frit-de-xot","title":{"rendered":"Freixura (Frit de xot)"},"content":{"rendered":"<p><strong>Ingredients<\/strong>:<br \/>\n(Per a 6 persones)<\/p>\n<ul>\n<li>1 freixura de xot<\/li>\n<li>2 manats de grells<\/li>\n<li>5 patates mitjanes<\/li>\n<li>6 alls<\/li>\n<li>1 pebre coent (2, si us agrada molt coent)<\/li>\n<li>6 carxofes<\/li>\n<li>2 pebres vermells<\/li>\n<li>1\/2 tassonet de vi negre<\/li>\n<li>oli d\u2019oliva<\/li>\n<li>sal<\/li>\n<li>pebre bo<\/li>\n<li>fonoll<\/li>\n<li>una fulla de llorer<\/li>\n<li>un manat de fonoll<\/li>\n<\/ul>\n<p><strong>Preparaci\u00f3<\/strong>:<\/p>\n<p>Tallau la freixura en trossos petits (va millor amb unes tisores que amb un ganivet).<\/p>\n<p>Netejau els grells. Eliminau la part verda m\u00e9s seca dels extrems i tallau-los en rodanxes. Pelau les patates i tallau-les com per fer les tradicionals patates fregides, per\u00f2 m\u00e9s primetes. Deixau-les en remull amb aigua.<\/p>\n<p>Netejau els pebres. Tallau-los per la meitat i tirau les llavors. Tallau-los en daus petits. Treis les fulles m\u00e9s exteriors de les carxofes, eliminau-ne les puntes i tallau els cors en l\u00e0mines. Posau-les dins un plat amb aigua i suc de llimona perqu\u00e8 no s\u2019ennegreixin.<\/p>\n<p>Posau oli abundant dins una paella i fregiu les patates amb 3 alls aixafats fins que quedin ben daurades i cruixents. Treis-les de la paella i deixau-hi nom\u00e9s una part d\u2019oli, la suficient per fregir la freixura, i tamb\u00e9 els alls. Posau-les damunt paper absorbent una estona i llavors passau-les a una greixonera gran. Dins el mateix oli fregiu la freixura amb el pebre coent tallat en dos trossos, el fonoll i el llorer. Salpebrau-la.\u00a0 Quan sigui cuita la freixura, treis-la de la paella i posau-la a degotar damunt paper absorbent. Abocau-la dins la greixonera amb les patates.<\/p>\n<p>Fregiu ara els pebres amb els altres tres alls aixafats, a poc foc i amb la paella tapada (necessiten una bona estona). Quan vegeu que el pebre comen\u00e7a a ser fluix, destapau la paella i acabau-los de fregir aix\u00ed perqu\u00e8 agafin color. En ser cuits, posau-los tamb\u00e9 damunt paper absorbent. Passada una estona, incorporau-los a la greixonera.<\/p>\n<p>Dins el mateix oli (si n\u2019hi ha poc, afegiu-n\u2019hi) sofregiu ara les carxofes i, quan siguin quasi cuites, afegiu-hi el grell. En ser cuites les carxofes i el grell, posau-los tamb\u00e9 a degotar damunt paper absorbent. Al cap d\u2019una estona, afegiu-los a la greixonera. Aleshores, posau la greixonera al foc, afegiu-hi\u00a0fonoll abundant i el vi\u00a0 i remenau perqu\u00e8 es mesclin b\u00e9 tots els ingredients mentres s\u2019escalfa el conjunt. Tastau i rectificau de sal si \u00e9s necessari. Serviu-la immediatament perqu\u00e8 \u00e9s un plat que refreda molt de pressa.<\/p>\n<p><strong>Nota:<\/strong><\/p>\n<p>Si en algun moment veis que l\u2019oli t\u00e9 miques, no el tireu. Colau-lo i reutilitzau-lo per acabar de preparar el plat. Si us agrada, hi podeu afegir bessons de fava tendra i x\u00edtxeros (p\u00e8sols).<\/p>\n<p>No pot faltar a la taula un bon vi negre de la
