{"id":72951,"date":"2013-05-12T22:04:09","date_gmt":"2013-05-12T22:04:09","guid":{"rendered":"https:\/\/gastronomicament.cat\/recepta\/illes-flotants"},"modified":"2013-05-12T22:04:09","modified_gmt":"2013-05-12T22:04:09","slug":"illes-flotants","status":"publish","type":"recepta","link":"https:\/\/gastronomicament.cat\/en\/recepta\/illes-flotants","title":{"rendered":"Illes flotants"},"content":{"rendered":"<p><strong>Ingredients<br \/>\n<\/strong><em>Per a 6 persones<\/em><\/p>\n<p><em>De la merenga<\/em>:<\/p>\n<ul>\n<li>6 blancs d\u2019ou<\/li>\n<li>100 g de sucre<\/li>\n<li>un polsim de sal<\/li>\n<\/ul>\n<p><em>De la crema anglesa<\/em>:<\/p>\n<ul>\n<li>1 litre de llet<\/li>\n<li>6 vermells d\u2019ou<\/li>\n<li>40 g de farina de blat de moro (Maizena)<\/li>\n<li>90 g de sucre<\/li>\n<li>1 branqueta de canyella<\/li>\n<li>la pell d\u2019una llimona ratllada<\/li>\n<\/ul>\n<p><em>Del caramel:<\/em><\/p>\n<ul>\n<li>40 g de sucre<\/li>\n<li>20 g d\u2019aigua<\/li>\n<li>unes gotes de suc de llimona<\/li>\n<\/ul>\n<p style=\"text-align: justify;\"><strong>Preparaci\u00f3<\/strong>:<br \/>\nPosau la llet al foc (reservau-ne una tasseta) amb la pell de llimona i la canyella. Quan alci el bull, abaixau el foc i deixau-la infusionar mentre preparau la merenga.<\/p>\n<p style=\"text-align: justify;\">Separau els blancs dels vermells. Posau els blancs dins un bol amb el pessic de sal i pujau-los amb la batedora el\u00e8ctrica de barnilles. Quan ja siguin consistents, incorporau-hi el sucre per tandes i continuau batent la merenga fins que sigui molt, molt ferma.<\/p>\n<p style=\"text-align: justify;\">Tornau a posar la llet al foc. Eliminau-ne la canyella i la pell de llimona. Quan torni a al\u00e7ar el bull, abaixau el foc al m\u00ednim i coeu-hi la merenga a cullerades. Ha de coure 2-3 minuts i heu de girar cada cullerada perqu\u00e8 es cogui b\u00e9 de les dues bandes. Aix\u00ed com tengueu les cullerades cuites, treis-les de l\u2019olla i dipositau-les dins una safata gran, damunt un peda\u00e7 o un full de paper absorbent perqu\u00e8 hi degotin.<\/p>\n<p style=\"text-align: justify;\">Posau la farina de blat de moro dins un recipient. Abocau-hi damunt la tasseta de llet que hav\u00edeu reservat i deixau reposar la mescla durant cinc minuts. Remenau b\u00e9 perqu\u00e8 es dissolgui la farina i assegurau-vos que no hi queda cap grumoll. Abocau la preparaci\u00f3 dins una cassola. Afegiu-hi el sucre, els vermells d\u2019ou i la llet que heu fet servir per coure la merenga a trav\u00e9s d\u2019un colador fi per eliminar possibles miques. Posau la cassola al foc mitj\u00e0 i remenau la preparaci\u00f3 constantment amb una batedora manual de barnilles fins que comenci a espessir-se.<\/p>\n<p style=\"text-align: justify;\">Abocau la crema anglesa dins un recipient gran (o dins 6 recipients individuals). Distribu\u00efu-hi les cullerades de merenga cuita.<\/p>\n<p style=\"text-align: justify;\">Preparau ara el caramel: posau dins una paella petita el sucre, l\u2019aigua i el suc de llimona. Feis coure el conjunt fins que el sucre prengui color mel\u00f3s i abocau-lo damunt la merenga.<\/p>\n<p><em>Nota<\/em>:<br \/>\nPreparau el plat poc temps abans de servir-lo. Podeu presentar-lo a taula encara tebi o a temperatura ambient.
