{"id":73080,"date":"2013-04-20T22:47:33","date_gmt":"2013-04-20T20:47:33","guid":{"rendered":"https:\/\/gastronomicament.cat\/recepta\/pastis-de-maduixa"},"modified":"2022-04-09T12:06:32","modified_gmt":"2022-04-09T10:06:32","slug":"pastis-de-maduixa","status":"publish","type":"recepta","link":"https:\/\/gastronomicament.cat\/en\/recepta\/pastis-de-maduixa","title":{"rendered":"Past\u00eds de maduixa"},"content":{"rendered":"<p><strong>Ingredients<\/strong><\/p>\n<p>Per a la base:<\/p>\n<ul>\n<li>125 g de galetes de tipus <em>digestive<\/em><\/li>\n<li>75 g de mantega<\/li>\n<\/ul>\n<p>Per a la mousse:<\/p>\n<ul>\n<li>125 g de maduixes<\/li>\n<li>4 fulls de gelatina<\/li>\n<li>125 ml de nata<\/li>\n<li>Suc de llimona<\/li>\n<li>4 blancs d&#8217;ou<\/li>\n<li>125 g de sucre<\/li>\n<li>25 ml d&#8217;aigua<\/li>\n<\/ul>\n<p>Per a la crema:<\/p>\n<ul>\n<li>200 g de llet condensada<\/li>\n<li>Suc de llimona<\/li>\n<li>3 fulls de gelatina<\/li>\n<li>1 formatge crem\u00f3s<\/li>\n<\/ul>\n<p>Per a la decoraci\u00f3: coberta<\/p>\n<ul>\n<li>125 g de maduixes<\/li>\n<li>3 cullerades de confitura de maduixa<\/li>\n<li>Licor de taronja<\/li>\n<\/ul>\n<p><strong>Elaboraci\u00f3<\/strong><\/p>\n<p><em>La base<\/em>:<br \/>\nCapolam les galletes i afegim la mantega a punt de pomada, aquesta mescla la col\u00b7locarem a la base d&#8217;un motlle qualsevol.<br \/>\nDespr\u00e9s ho ficam 1 hora a la gelera, mentrestrant podem elaborar la resta de la preparaci\u00f3.<\/p>\n<p><em>La crema<\/em>:<br \/>\nEn un bol mesclam la llet condensada amd el suc de llimona, el formatge en crema i el fulls de gelatina ja hidratats amb aigua freda.<br \/>\nA continuaci\u00f3, bateu-ho energ\u00e8ticament fins que obteniu unacrema consistent<\/p>\n<p><em>La mousse<\/em>:<br \/>\nPrimer de tot posam a remull els 4 fulls de gelatina i els reservam, farem la merenga italiana bullint 50 ml d&#8217;aigua amb 250 g de sucre, mentre l&#8217;almivar agafa temperatura. Despr\u00e9s, afegirem l&#8217;almivar a fil prim damunt el blanc d&#8217;ous mig pujats i ho acabaem de pujar fins que se refredi i agafi consist\u00e8ncia.<\/p>\n<p>El segon pas \u00e9s muntar la nata.<\/p>\n<p>El tercer, mesclar els fulls de gelatina que estaven en remull amb una mica de polpa de maduixa i el suc de una llimona, ho encalentim fins que s\u00a1hagi dissolt la gelatina. Ho mesclam amb la resta de la polpa i li ofegim a poc a poc la merenga, i en darrer lloc hi afegim la nata amb moviments envolvents.<\/p>\n<p>El quart pas \u00e9s omplir amb aquesta pasta els motlles.<\/p>\n<p><em>La coberta<\/em>:<br \/>\nPosarem una mica de licor de toronja, maduixes i 3 cullerades de confitura a bullir fins aconseguir una salsa lleugera, que bobreixi els motlles i ho
