{"id":73221,"date":"2013-03-21T00:16:24","date_gmt":"2013-03-21T00:16:24","guid":{"rendered":"https:\/\/gastronomicament.cat\/recepta\/pastis-de-trufa-i-taronja"},"modified":"2013-03-21T00:16:24","modified_gmt":"2013-03-21T00:16:24","slug":"pastis-de-trufa-i-taronja","status":"publish","type":"recepta","link":"https:\/\/gastronomicament.cat\/en\/recepta\/pastis-de-trufa-i-taronja","title":{"rendered":"Past\u00eds de t\u00f2fona i taronja"},"content":{"rendered":"<p><strong>Ingredients<\/strong><br \/>\nIngredients per al bescuit:<br \/>\n-200 g de mantega estovada<br \/>\n-200 g de sucre<br \/>\n-un polsim de sal<br \/>\n-ratlladura de 3 taronges<br \/>\n-4 ous mitjans<br \/>\n-200 g de farina<br \/>\n-1 sobre de llevat<\/p>\n<p>Ingredients per a l&#8217;alm\u00edvar de sucre:<br \/>\n-suc de 3 taronges acabades de sucar<br \/>\n-150 g de sucre<br \/>\n-2 cullerades de licor de taronja (Cointreau)<\/p>\n<p>Ingredients per la ganache:<br \/>\n-250 g de crema de llet espessa<br \/>\n-300 g de xocolata (m\u00ednim 53% de cacao) picat o en gotes<br \/>\n-1 culleradeta de glucosa<\/p>\n<p>Ingredients per al farcit:<br \/>\n-3 o 4 cullerades de confitura de taronja amarga<br \/>\n<strong>Elaboraci\u00f3<\/strong><br \/>\nPer al bescuit: Posar la mantega, el sucre, la sal i la ratlladura de taronja en un bol i batre junts fins que la preparaci\u00f3 blanquegi i estigui esponjosa.<br \/>\nBatre lleugerament els ous en un altre bol i agregar-los a poc a poc a la barreja de mantega sense deixar de batre amb rapidesa. Si la preparaci\u00f3 comenc\u00e9s a separar-se, deixar d&#8217;afegir ou i incorporar batent dues o tres cullerades de farina. Aix\u00f2 far\u00e0 que la massa quedi lligada. Una vegada afegit tot l&#8217;ou, sedasssar la farina per damunt i remoure lleugerament. Aix\u00f2 assegura que el bescuit es mantingui lleuger i esponj\u00f3s.<br \/>\nDividir la massa entre tres motlles greixats de 20 cm i coure cadascun de 15 a 20 minuts o fins que punxant amb un escuradents aquest surti net. Deixar reposar uns minuts i pinzellar la seva superf\u00edcie amb el alm\u00edvar mentre encara estan calents, aix\u00ed s&#8217;absorbeix m\u00e9s r\u00e0pidament. Una vegada tebis, retirar els bescuits del motlle i deixar refredar-los. Despr\u00e9s embolicar-los en paper film i deixar-los reposar tota la nit a temperatura ambient, d&#8217;aquesta forma es mantindran sucosos i tindran la textura perfecta per polir-los i emplenar-los. Si es retallen despr\u00e9s de coure&#8217;ls tendeixen a esmicolar-se o fins i tot trencar-se.<\/p>\n<p>Mentre es couen els bescuits preparar l&#8217;alm\u00edvar per remullar. Posar el suc de taronja i el sucre en un cass\u00f3 i portar a ebullici\u00f3. Coure a foc lent fins que el sucre s&#8217;hagi dissolt b\u00e9. Deixar refredar lleugerament, afegir el licor de taronja i reservar.<\/p>\n<p>Per fer la ganache, abocar la crema en un cass\u00f3 i escalfar-la lentament al foc. Posar la xocolata en un bol i afegir per damunt la crema calenta. Remoure suaument amb una batedora de varetes o una esp\u00e0tula fins que la xocolata s&#8217;hagi fos. Agregar la glucosa i deixar que la ganache qualli fins que adquireixi una consist\u00e8ncia de mantegosa.<\/p>\n<p>Per muntar el past\u00eds, polir els bescuits i unir les tres capes usant ganache per a la primera capa i confitura de taronja per a la segona. Usar la resta de ganache per recobrir la superf\u00edcie i els costats del past\u00eds, reservant una cullerada aproximadament per decorar amb una m\u00e0niga pastissera amb forat petit.<br \/>\nLa ganache ha d&#8217;abocar-se calenta sobre el past\u00eds i despr\u00e9s es deixa refredar fins que qualli abans de decorar.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Per al bescuit: Posar
