Les deixam dins aigua per llevar l&#8217;excedent de mid\u00f3.<\/p>\n<p>Mentrestant podem pelar la ceba, tallar-la en juliana i fregir-la dins una paella. Li tirarem un rajol\u00ed de vi de cuina o Pedro Xim\u00e9nez de manera que la ceba es faci m\u00e9s r\u00e0pidament.<\/p>\n<p>Mentre la ceba es fa, podem fregir les patates.<\/p>\n<p>Despr\u00e9s, dins un bol posam els ous i un pessic de sal. Per uallar millor els ous se sol posar un rajol\u00ed de llet. I per a que la truita pugi m\u00e9s, mig sobre de &#8220;Canario&#8221; a la mescla.<\/p>\n<p>En tenir la ceba i les patates fregides, les arreglam de sal, les mesclam ben mesclades i les posam dins una paella (jo sol emprar unes paelles dobles a posta per a fer truites, t&#8217;ajuden a fer la volta i les pots emprar per altres coses).<\/p>\n<p>Hi afegirem els ous i a foc lent esperarem que una banda estigui feta per donar la volta a la truita i fer l&#8217;altra part.<\/p>\n<p>En estar cuita de totes dues bandes, ja podem emplatar la
