Andorra<\/p>\n<p>La\u00a0<strong>dieta mediterr\u00e0nia<\/strong>, tan venerada com a model d&#8217;alimentaci\u00f3 saludable, est\u00e0 experimentant un declivi notable en les darreres d\u00e8cades. Aquest fet es pot atribuir a diversos factors, des dels canvis en l&#8217;estil de vida fins a la globalitzaci\u00f3 dels h\u00e0bits alimentaris cap a una cultura occidental comuna, en la qual abunden els productes processats i en qu\u00e8 les hortalisses, llegums i fruites estan perdent import\u00e0ncia.<\/p>\n<p>L&#8217;enquesta europea de salut a Espanya va recollir l&#8217;any 2020 que\u00a0<strong>nom\u00e9s el 52% de les dones consumia verdures, amanides i hortalisses di\u00e0riament, i la xifra baixava fins al 41% en el cas dels homes<\/strong>. Assortadament, nom\u00e9s un 1,5% de les dones i un 1,9% dels homes declaraven no consumir mai fruita fresca.<\/p>\n<p>Les\u00a0<strong>verdures<\/strong>, les\u00a0<strong>fruites\u00a0<\/strong>i els\u00a0<strong>llegums\u00a0<\/strong>han estat l&#8217;<strong>eix fonamental<\/strong>\u00a0que vertebrava la\u00a0<strong>dieta mediterr\u00e0nia<\/strong>, garant de la salut de les persones que la practicaven i que va mer\u00e8ixer l&#8217;atenci\u00f3 del\u00a0<a href=\"https:\/\/www.enciclopedia.cat\/gran-enciclopedia-catalana\/ancel-keys\" target=\"_blank\" rel=\"noopener nofollow\"><strong>Dr<\/strong>.\u00a0<strong>Ancel Keys<\/strong><\/a>\u00a0amb l&#8217;Estudi dels set pa\u00efsos. Aquest model diet\u00e8tic,\u00a0<strong>associat a una disminuci\u00f3 de la mortalitat per malaltia cardiovascular\u00a0<\/strong>i a unes\u00a0<strong>menors taxes de malalties no transmissibles<\/strong>\u00a0lligades a l&#8217;estil de vida (<strong>diabetis<\/strong>,\u00a0<strong>hipertensi\u00f3<\/strong>, entre d&#8217;altres), s&#8217;ha vist substitu\u00eft per una alimentaci\u00f3 globalitzada, m\u00e9s semblant a la dels Estats Units dels anys 60 i 70 que recollia el Dr. Keys, que no pas a la dels resilients cretencs que gaudien de tan bona salut cardiovascular en aquells anys, malgrat les inclem\u00e8ncies sofertes a la postguerra.<\/p>\n<p>Tal vegada\u00a0<strong>els motius principals d\u2019aquest abandonament<\/strong>\u00a0s\u00f3n el canvi en els patrons d\u2019estil de vida, la jornada laboral partida, les campanyes de m\u00e0rqueting, la necessitat de provar nous sabors i l\u2019eterna cerca de la hiperproductivitat. El fet d&#8217;haver-nos apropat a les ciutats ha canviat les nostres prefer\u00e8ncies vitals i, per tant, tamb\u00e9 les nutricionals.<\/p>\n<p>La rapidesa amb qu\u00e8 es pot accedir a determinats aliments, la facilitat de preparaci\u00f3, la seva major durada i, per descomptat, el seu sabor atractiu han fet que haguem perdut part de la nostra ess\u00e8ncia culin\u00e0ria. Certament, l&#8217;Estat espanyol \u00e9s un referent tant en cuina com en cultura gastron\u00f2mica, amb mat\u00e8ries primeres de primer nivell; tanmateix, aix\u00f2 difereix del dia a dia de les persones.<\/p>\n<p>La\u00a0<strong>recuperaci\u00f3 d&#8217;estils de vida saludables repercutir\u00e0 favorablement en la salut de les persones<\/strong>, com tamb\u00e9 en l&#8217;economia.
