{"id":100977,"date":"2025-04-15T07:41:26","date_gmt":"2025-04-15T05:41:26","guid":{"rendered":"https:\/\/web2025.gastronomicament.cat\/jaume-gomez-guanyador-de-la-final-del-iii-concurs-de-cuina-amb-peix-popular"},"modified":"2026-04-16T18:34:05","modified_gmt":"2026-04-16T16:34:05","slug":"jaume-gomez-guanyador-de-la-final-del-iii-concurs-de-cuina-amb-peix-popular","status":"publish","type":"post","link":"https:\/\/gastronomicament.cat\/es\/jaume-gomez-guanyador-de-la-final-del-iii-concurs-de-cuina-amb-peix-popular","title":{"rendered":"Jaume G\u00f3mez, guanyador de la final del III\u202fConcurs de Cuina amb Peix Popular"},"content":{"rendered":"\n<p>El guanyador de la&nbsp;<strong>tercera edici\u00f3&nbsp;<\/strong>del&nbsp;<strong>Concurs de Cuina amb Peix Popular<\/strong>&nbsp;ha estat el xef&nbsp;<strong>Jaume G\u00f3mez Riutort<\/strong>&nbsp;del restaurant&nbsp;<strong>Can Simoneta Gastron\u00f2mic&nbsp;<\/strong>amb la recepta gerret escabetxat i envinagrats de les Balears.<\/p>\n\n\n\n<p>Aquest certamen t\u00e9 com a&nbsp;<strong>objectiu&nbsp;<\/strong>destacar el valor gastron\u00f2mic de diferents esp\u00e8cies de peixos locals que tradicionalment formaven part de la cuina de les Illes Balears, per\u00f2 que actualment gaireb\u00e9 no es consumeixen.<\/p>\n\n\n\n<p>Els&nbsp;<strong>sis cuiners finalistes<\/strong>&nbsp;han estat: de&nbsp;<strong>Mallorca<\/strong>,&nbsp;<strong>Kike Erazo<\/strong>, del&nbsp;<strong>restaurant Morralla<\/strong>, amb el plat Morena m\u00eda, i&nbsp;<strong>David M\u00e9ndez<\/strong>, del restaurant del&nbsp;<strong>Castell Hotel Son Vida<\/strong>, amb el plat moll, gnocchi de moraduix i beurre blanc d&#8217;avellanes; en representaci\u00f3 de&nbsp;<strong>Menorca<\/strong>,&nbsp;<strong>Samuel Moreno<\/strong>, del restaurant del&nbsp;<strong>Villa LeBlanc Gran Meli\u00e0<\/strong>, amb Ess\u00e8ncia mediterr\u00e0nia, i&nbsp;<strong>Jes\u00fas Garcia<\/strong>, del restaurant&nbsp;<strong>Dos Camins<\/strong>, amb el plat Vermell mediterrani, i d\u2019<strong>Eivissa<\/strong>,&nbsp;<strong>Jaume G\u00f3mez<\/strong>, del restaurant Can Simoneta Gastron\u00f2mic, amb gerret escabetxat i envinagrats de les Balears, i&nbsp;<strong>Pablo Izquierdo<\/strong>, del restaurant&nbsp;<strong>WhataGozo<\/strong>, amb el plat El mar i l&#8217;agricultor.<\/p>\n\n\n\n<p>Els&nbsp;<strong>peixos seleccionats<\/strong>&nbsp;per poder ser utilitzats en el certamen han estat, entre d\u2019altres, el&nbsp;<strong>sorell<\/strong>, el&nbsp;<strong>moll de roca<\/strong>, el&nbsp;<strong>gat\u00f3<\/strong>, la&nbsp;<strong>morena<\/strong>, el&nbsp;<strong>pagell<\/strong>, el&nbsp;<strong>gerret<\/strong>, la&nbsp;<strong>m\u00f2llera&nbsp;<\/strong>i el&nbsp;<strong>sarg<\/strong>.<\/p>\n\n\n\n<p>El director general de Qualitat Agroaliment\u00e0ria i Producte Local,&nbsp;<strong>Joan Llabr\u00e9s<\/strong>, ha estat un dels membres del jurat de la final que s\u2019ha celebrat el dilluns 14 d&#8217;abril a l\u2019Escola d\u2019Hoteleria de les Illes Balears (EHIB). Llabr\u00e9s ha destacat que \u00abactualment s\u2019ha perdut la tradici\u00f3 de cuinar amb els peixos locals, que fins fa poc eren de consum habitual.<strong>&nbsp;La seva comercialitzaci\u00f3 ha perdut valor, cosa que fa que en el mercat es trobin a preus molt assequibles<\/strong>, per\u00f2 s\u2019hi poden fer preparacions de gran qualitat\u00bb. En aquest sentit, el director general ha afegit que \u00abprecisament iniciatives com aquesta serveixen per recordar que es poden fer servir per cuinar plats exquisits\u00bb.<\/p>\n\n\n\n<p>Per part de la Conselleria d\u2019Agricultura, Pesca i Medi Natural, tamb\u00e9 ha format part del jurat, el director general de Pesca,&nbsp;<strong>Antoni M. Grau<\/strong>, qui ha recordat que \u00abque les esp\u00e8cies de peixos populars s\u00f3n m\u00e9s abundants i m\u00e9s f\u00e0cils de pescar i aix\u00f2 permet als pescadors diversificar la seva oferta. A m\u00e9s,&nbsp;<strong>la seva captura \u00e9s positiva per la biodiversitat<\/strong>, a banda de la gran quantitat que hi ha, s\u00f3n esp\u00e8cies que ocupen un lloc baix de la cadena tr\u00f2fica\u00bb.<\/p>\n\n\n\n<p>La final del III Concurs de Cuina amb Peix Popular s\u2019ha fet amb el patrocini de la Conselleria d\u2019Agricultura, Pesca i Medi Natural i el suport d\u2019HORECA Baleares, l&#8217;Associaci\u00f3 de Cuiners Afincats a les Illes Balears (ASCAIB) i l\u2019Escola d\u2019Hoteleria de les Illes Balears (EHIB). Tamb\u00e9 hi han col\u00b7laborat OpMallorcamar i Peix Nostrum. La final d\u2019avui s\u2019ha dut a terme despr\u00e9s de les finals pr\u00e8vies celebrades a Mallorca, Menorca i Eivissa, emmarcades en la Fira HORECA Balears
