{"id":102335,"date":"2025-08-11T08:00:50","date_gmt":"2025-08-11T06:00:50","guid":{"rendered":"https:\/\/web2025.gastronomicament.cat\/la-do-binissalem-comenca-la-verema-i-tot-apunta-al-una-bona-anyada"},"modified":"2026-04-16T15:56:44","modified_gmt":"2026-04-16T13:56:44","slug":"la-do-binissalem-comenca-la-verema-i-tot-apunta-al-una-bona-anyada","status":"publish","type":"post","link":"https:\/\/gastronomicament.cat\/es\/la-do-binissalem-comenca-la-verema-i-tot-apunta-al-una-bona-anyada","title":{"rendered":"La DO Binissalem comen\u00e7a la verema i tot apunta a una bona anyada"},"content":{"rendered":"\n<p>De manera t\u00edmida, la setmana passada va comen\u00e7ar la verema a la comarca de la DO Binissalem a algunes parcel\u00b7les de premsal blanc, de sir\u00e0 i de chardonnay.<\/p>\n\n\n\n<p>A partir d&#8217;aquesta setmana, es preveu que els cellers de la DO Binissalem comencin el tall de ra\u00efm, comen\u00e7ant amb les varietats m\u00e9s primerenques, i seguint a bon ritme amb la resta, fins a principi d&#8217;octubre.<\/p>\n\n\n\n<p>La data de verema varia en funci\u00f3 de cada finca, del tipus de ra\u00efm i de l&#8217;estil de vi que es pret\u00e9n elaborar. Aquests dies, els en\u00f2legs i t\u00e8cnics dels cellers controlen la qualitat del fruit, no sols la concentraci\u00f3 de sucre, sin\u00f3 tamb\u00e9 l&#8217;acidesa i la maduraci\u00f3 fen\u00f2lica, amb l&#8217;objectiu d&#8217;ajustar la verema a la qualitat desitjada per al vi emparat per la DO Binissalem.<\/p>\n\n\n\n<p><strong>Condicions clim\u00e0tiques de la campanya<\/strong><\/p>\n\n\n\n<p>Segons l&#8217;Ag\u00e8ncia Estatal de Meteorologia (AEMET), l&#8217;hivern 2024-25 va ser molt c\u00e0lid i sec a les Balears. Les temperatures van estar 1\u00b0C per sobre de la mitjana i les precipitacions a penes van assolir el 66% del valor normal.<\/p>\n\n\n\n<p>Mar\u00e7 va ser molt c\u00e0lid i especialment humit a les Illes Balears i Piti\u00fcses (220% de precipitacions respecte a l&#8217;habitual). Abril va mantenir temperatures elevades, per\u00f2 va ser molt sec, i maig va resultar c\u00e0lid i humit. Aquestes condicions, en el moment de la floraci\u00f3, van afavorir l&#8217;aparici\u00f3 de m\u00edldiu en algunes vinyes i en les varietats m\u00e9s sensibles al fong, com ara premsal blanc, amb un efecte en la producci\u00f3, encara que dif\u00edcil de quantificar fins que finalitzi el tall del ra\u00efm.<\/p>\n\n\n\n<p>Al juny es va registrar el mes m\u00e9s c\u00e0lid i sec des de 1961, amb onades de calor primerenques que es van estendre fins a juliol. No obstant aix\u00f2, a partir de la tercera setmana de juliol es va produir un descens de temperatures que ha afavorit el desenvolupament \u00f2ptim de la vinya, alleujant l&#8217;estr\u00e8s h\u00eddric i alentint la maduraci\u00f3 del fruit. Aquest fenomen tindr\u00e0, previsiblement, un efecte positiu en la qualitat del ra\u00efm. Aquests \u00faltims dies, la temperatura est\u00e0 assolint els valors normals de l&#8217;\u00e8poca, sense arribar als valors extrems que s&#8217;estan registrant en la pen\u00ednsula ib\u00e8rica.<\/p>\n\n\n\n<p><strong>Canvi clim\u00e0tic i adaptaci\u00f3<\/strong><\/p>\n\n\n\n<p>L&#8217;impacte del canvi clim\u00e0tic \u00e9s cada vegada m\u00e9s evident. Segons l&#8217;\u00cdndex clim\u00e0tic de Winkler, a la comarca DO Binissalem s&#8217;ha registrat un augment de l&#8217;11% en els graus-dia acumulats entre 2013 i 2024.<\/p>\n\n\n\n<p>A m\u00e9s, el nombre de dies amb temperatures m\u00e0ximes superiors a 35\u00b0C ha passat de 9 a 30, i les m\u00ednimes per sobre de 20\u00b0C han passat de 20 a 40 dies. Aquesta situaci\u00f3 compromet la capacitat de recuperaci\u00f3 de les plantes durant la nit, influint en la composici\u00f3 qu\u00edmica del fruit.<\/p>\n\n\n\n<p>En els \u00faltims anys,&nbsp;<strong>s&#8217;ha detectat un avan\u00e7ament progressiu en les dates d&#8217;inici de verema. Per exemple, la varietat gir\u00f3 ros ha iniciat la seva verema, en mitjana, 8 dies abans des de 2019 fins a 2024<\/strong>.<\/p>\n\n\n\n<p>Els viticultors de la DO Binissalem&nbsp;<strong>estan aplicant mesures d&#8217;adaptaci\u00f3 com l&#8217;ombreig de vinyes, aclarides, veremes primerenques i el foment de varietats aut\u00f2ctones m\u00e9s resilients a la calor<\/strong>. Una d&#8217;aquestes varietats \u00e9s l\u2019Escursac, recentment autoritzada en la DO, i altres que estan en proc\u00e9s de revisi\u00f3 com: esper\u00f3 de gall, gir\u00f3 negre i fogoneu.<\/p>\n\n\n\n<p><strong>Perspectives per a la campanya 2025<\/strong><\/p>\n\n\n\n<p>Si b\u00e9 encara \u00e9s prest per a fer una valoraci\u00f3 definitiva, les previsions apunten a una campanya de bona qualitat, encara que amb una possible reducci\u00f3 de la producci\u00f3 en determinades varietats.<\/p>\n\n\n\n<p>Les pr\u00f2ximes setmanes seran claus.&nbsp;<strong>Els equips dels cellers ultimen els preparatius i segueixen de prop l&#8217;evoluci\u00f3 de la vinya, realitzen controls de maduraci\u00f3 i qualitat del fruit<\/strong>&nbsp;per a assegurar l&#8217;elaboraci\u00f3 de vins amb el segell distintiu de la DO Binissalem.<\/p>\n\n\n\n<p><strong>Control i certificaci\u00f3<\/strong><\/p>\n\n\n\n<p>El CRDO Binissalem disposa d&#8217;un sistema digital per al registre de les entrades de ra\u00efm dels cellers.
