La decisi\u00f3 marca el tancament d&#8217;una etapa professional iniciada costat a costat amb el xef alemany i deixa pas a una nova fase per al restaurant.<br><br>P\u00e9rez ha explicat que la seva sortida estava vinculada des de l&#8217;inici a la traject\u00f2ria professional de Gerhard Schwaiger. \u201cAquest projecte neix amb Schwaiger, per a ell i juntament amb ell. Quan vam arrancar, jo ja vaig comunicar que quan ell es jubil\u00e9s, jo tamb\u00e9 tancaria la meva etapa, perqu\u00e8 aqu\u00ed hi posa Schwaiger i aix\u00f2 era amb ell i per a ell\u201d, ha assenyalat.<br><br>La professional t\u00e9 un reconeixement ampli en el sector; entre les seves distincions destaquen el premi com a<strong>&nbsp;Millor Cap de Sala de Mallorca 2016, atorgat per l&#8217;Associaci\u00f3 de Periodistes i Escriptors Gastron\u00f2mics de les Illes Balears&nbsp;<\/strong>(APEGIB), i el&nbsp;<strong>Premi Millor Cap de Sala de PIMEM 2023<\/strong>. Amb aquest aval, afronta ara un nou moment professional obert a diferents possibilitats. \u201cNo vull posar-me ara mateix una meta tancada. Vull reflexionar, assentar aquests anys de professi\u00f3 i viure aquest moment com classifica i amb calma. No em tanc a res, llevat de fer una cosa que no m&#8217;emocioni\u201d, ha explicat.<br><br><strong>M\u00e9s de tres d\u00e8cades de traject\u00f2ria en alta gastronomia, hoteleria i restauraci\u00f3<br><\/strong>La traject\u00f2ria professional de Cristina P\u00e9rez&nbsp;<strong>va comen\u00e7ar l&#8217;any 1992 a Mallorca de la m\u00e0 de Gerhard Schwaiger&nbsp;<\/strong>en incorporar-se a l&#8217;equip del restaurant Trist\u00e1n. All\u00e0, hi va iniciar la seva carrera des de la base, com a responsable de rang, i es va anar formant progressivament en l&#8217;\u00e0mbit de la sommelieria fins a convertir-se en la primera dona sommelier de l&#8217;Estat espanyol. La seva etapa a Trist\u00e1n, vinculada a l&#8217;alta gastronomia i a un restaurant que va assolir les dues estrelles Michelin sota la direcci\u00f3 del reconegut xef alemany, va culminar amb la seva responsabilitat com a directora.<br><br>Despr\u00e9s del seu pas per Trist\u00e1n, P\u00e9rez va ampliar la seva experi\u00e8ncia en l&#8217;hoteleria i en diferents \u00e0mbits de la restauraci\u00f3.&nbsp;<strong>Va participar en l&#8217;obertura de l&#8217;hotel Dorint (actualment Steigenberger) a Camp de Mar<\/strong>, on va treballar durant nou anys, i posteriorment va continuar la seva traject\u00f2ria a l&#8217;Hotel Maricel.<br><br>M\u00e9s endavant es va incorporar al&nbsp;<strong>restaurant Wellies, a Port Portals<\/strong>, un establiment estretament vinculat a la gastronomia, la cocteleria i la vida social de Mallorca. La seva carrera tamb\u00e9 va incloure una etapa en la n\u00e0utica com a responsable del iot CD Two i una experi\u00e8ncia en cuina de producci\u00f3 juntament amb<strong>&nbsp;Ramon Andreu<\/strong>, a la cadena&nbsp;<strong>Tast<\/strong>, on va participar en la creaci\u00f3 d&#8217;una cuina central per donar servei als restaurants del grup.<br><br>Amb un bagatge constru\u00eft des de l&#8217;alta gastronomia, l&#8217;hoteleria, la restauraci\u00f3, la n\u00e0utica i la producci\u00f3,&nbsp;<strong>Cristina P\u00e9rez va reprendre el seu vincle professional amb Gerhard Schwaiger en la darrera etapa de Trist\u00e1n i, posteriorment, tots dos van impulsar el restaurant Schwaiger, projecte en el qual ha exercit durant 11 anys com a s\u00f2cia propiet\u00e0ria i directora<\/strong>.<br><br>Des d&#8217;aquesta posici\u00f3, va desenvolupar tamb\u00e9 una l\u00ednia de consultoria gastron\u00f2mica que li va permetre participar en projectes destacats com Assaona (actualment \u00c0nsia), Suculenta, l&#8217;Hotel Coto i la cadena IT Mallorca, on va exercir durant quatre anys com a directora corporativa d&#8217;aliments i begudes.<br><br>\u201cTreballar amb un gran mestre com Gerhard Schwaiger ha estat una oportunitat que he gaudit molt\u00edssim, per\u00f2 ara vull viure aquest nou moment amb calma, il\u00b7lusi\u00f3 i ganes de continuar creixent\u201d, afirma, i assegura que encara aquesta nova etapa amb optimisme. \u201cCrec que vindran coses boniques.
