{"id":63520,"date":"2019-07-04T10:24:34","date_gmt":"2019-07-04T08:24:34","guid":{"rendered":"https:\/\/gastronomicament.cat\/que-diu-la-nova-normativa-del-pa"},"modified":"2019-07-04T10:24:34","modified_gmt":"2019-07-04T08:24:34","slug":"que-diu-la-nova-normativa-del-pa","status":"publish","type":"post","link":"https:\/\/gastronomicament.cat\/es\/que-diu-la-nova-normativa-del-pa","title":{"rendered":"Qu\u00e8 diu la nova normativa del pa?"},"content":{"rendered":"<p>El Consell de Ministres ha aprovat la nova normativa del pa i planteja novetats destacades.<\/p>\n<p>D&#8217;una banda\u00a0<strong>el pa ser\u00e0 m\u00e9s barat<\/strong>\u00a0ja que en lloc d&#8217;aplicar-se un 10% d&#8217;IVA la taxa es redueix i\u00a0<strong>passa a tenir un 4% d&#8217;IVA\u00a0<\/strong>com a producte de primera necessitat que \u00e9s.<\/p>\n<p>D&#8217;altra banda, fins ara s&#8217;anunciaven pans que realment no eren integrals. Ara\u00a0<strong>perqu\u00e8 un pa sigui integral, el 100% de la farina que s&#8217;usi ha de ser integral<\/strong>. En cas que no sigui aix\u00ed, el forner haur\u00e0 d&#8217;esmentar el percentatge de farina emprada a l&#8217;etiqueta.<\/p>\n<p>Una altra novetat \u00e9s que<strong>\u00a0el pa de s\u00e8gol nom\u00e9s podr\u00e1 fer-se d&#8217;aquest cereal.<\/strong><\/p>\n<p>La nova normativa\u00a0<strong>concreta la definici\u00f3 de massa mare\u00a0<\/strong>i s&#8217;estableixen els requisits per usar la denominaci\u00f3 &#8216;elaborat amb massa mare&#8217;. Tamb\u00e9 defineix diferents tipus de pa.<\/p>\n<p>A m\u00e9s a m\u00e9s, s&#8217;hi defineix l&#8217;elaboraci\u00f3 artesana del pa, de manera que es prima el factor hum\u00e0 davant el mec\u00e0nic.<\/p>\n<p><strong>Es prohibeix fer pa ratllat amb restes de pa que provinguin d&#8217;establiments de consum.\u00a0<\/strong><\/p>\n<p>Els pans elaborats amb llevadura de panificaci\u00f3 i tenguin una fermentaci\u00f3 de la massa, despr\u00e9s d&#8217;haver-la pastada i abans de la cocci\u00f3, a una temperatura superior als 4\u00baC durant, com a m\u00ednim, 8 hores, podran incloure la menci\u00f3 elaborat amb llarga fermentaci\u00f3.<\/p>\n<p><strong>Es limita la quantitat de sal\u00a0<\/strong>que se pot usar per fer el pa com\u00fa.
