Coll: \u00abFalta formaci\u00f3 i informaci\u00f3 als restaurants sobre la celiaquia\u00bb"},"content":{"rendered":"<p>Els professionals del sector de l&#8217;hoteleria i restauraci\u00f3 tenen una excel\u00b7lent oportunitat per con\u00e8ixer de ben a prop la malaltia cel\u00edaca, gr\u00e0cies a la jornada &#8216;Qu\u00e8 \u00e9s la malaltia cel\u00edaca i com \u00e9s la dieta dels cel\u00edacs&#8217;, que ha organitzat l&#8217;Associaci\u00f3 de Cel\u00edacs de les Illes Balears (ACIB).<\/p>\n<p>\u00c9s un acte obert que tendr\u00e0 lloc dijous, 2 de febrer, de 17 a 19.30 hores, a la sala d&#8217;actes de l&#8217;Escola d&#8217;Hoteleria de les Illes Balears. N&#8217;explica m\u00e9s detalls, Miquel \u00c0ngel Coll, un dels organitzadors de l&#8217;acte.<\/p>\n<p><strong>Els restaurants estan sensibilitzats amb la celiaquia?<\/strong><br \/>\nPer norma general no hi estan sensibilitzats, llevat d&#8217;alguns establiments que per motius personals han tocat la celiaquia, i ofereixen servei al col\u00b7lectiu. Actualment, a les Balears es poden comptar amb una m\u00e0 els establiments 100% que hi estan sensibilitzats.<\/p>\n<p><strong>Quines problem\u00e0tiques troben els cel\u00edacs als restaurants?<\/strong><br \/>\nQuan els cel\u00edacs surten de casa troben establiments que oferten una carta sense gluten (ja que per normativa han de marcar els al\u00b7l\u00e8rgens de cada elaboraci\u00f3); per\u00f2 aquest fet, no garanteix que dins aquestes elaboracions (que a simple vista s\u00f3n lliures de productes que contenen gluten) hi pugui haver una contaminaci\u00f3 creuada. Per tant, \u00e9s un error pensar que els productes sense gluten s\u00f3n sense gluten perqu\u00e8 han pogut sofrir alg\u00fan tipus de contaminaci\u00f3. Els cel\u00edacs estan cansats de trobar restaurants i altres establiments que oferten productes sense gluten \u00abper a no molt cel\u00edacs\u00bb.<\/p>\n<blockquote><p>NO S&#8217;ENT\u00c9N QUE ELS PRODUCTES PER A CEL\u00cdACS TENGUIN L&#8217;IVA M\u00c9S CAR<\/p><\/blockquote>\n<p><strong>Qu\u00e8 significa \u00abper a no molts cel\u00edacs\u00bb?<\/strong><br \/>\nNo s\u00e9 qu\u00e8 volen dir, perqu\u00e8 la malaltia cel\u00edaca \u00e9s igual per a tothom, independentment dels s\u00edmptomes que genera. Per tant, la problem\u00e0tica que trobam diari\u00e0ment \u00e9s la falta d&#8217;informaci\u00f3 i formaci\u00f3 del sector.<\/p>\n<p><strong>Per qu\u00e8 heu muntat propera jornada i quins temes s&#8217;hi tractaran?<\/strong><br \/>\nHem organitzat aquesta jornada per aconseguir reunir personal del sector professional que vulgui, d&#8217;alguna manera, atendre els afectats en condicions segures i garantir una seguretat aliment\u00e0ria adequada a les necessitats. La jornada est\u00e0 composta per una presentaci\u00f3 per part de l&#8217;Associaci\u00f3 de Cel\u00edacs de les Illes Balears, perqu\u00e8 a partir d&#8217;aquest punt qui vulgui assessorament o ampliar la formaci\u00f3 s&#8217;hi pugui posar en contacte i treballar plegats.<\/p>\n<p>Seguidament, una doctora far\u00e0 una breu explicaci\u00f3 sobre qu\u00e8 \u00e9s la celiaquia. A continauci\u00f3, el departament de Qualitat i Seguretat Aliment\u00e0ria de Federaci\u00f3 d&#8217;Associaci\u00f3ns de Cel\u00edacs d&#8217;Espanya (FACE) parlar\u00e0 de tots els aspectes rellevants que s&#8217;han de tenir en compte en aquest afer, amb especial atenci\u00f3 a la contaminaci\u00f3 creuada. L&#8217;acte acabar\u00e0 amb un intercanvi d&#8217;impressions entre tots els assistents i amb les empreses col\u00b7laboradores de l&#8217;ACIB que des de fa temps promouen els productes aut\u00f2ctons i aptes per a cel\u00edacs.<\/p>\n<p><strong>A qui s&#8217;adre\u00e7a l&#8217;acte?<\/strong><br \/>\nA tothom en general, per\u00f2 principalment a tot el sector de la restauraci\u00f3 i hoteleria. Tamb\u00e9 a tots els futurs professionals del sector com s\u00f3n els alumnes d&#8217;Hoteleria. Vull aprofitar l&#8217;ocasi\u00f3 per convidar a tothom a venir a aquesta jornada i a con\u00e8ixer l&#8217;associaci\u00f3 a la web: www.celiacosbaleares.org. Estarem encantats d&#8217;ajudar com faci falta i de rebre tota l&#8217;ajuda que ens vulguin oferir. Tenim molt per fer i molt que agrair.<\/p>\n<p><strong>Com pot ser que els productes per a cel\u00edacs tenguin l&#8217;IVA m\u00e9s car s\u00ed s\u00f3n de primera necessitat?<\/strong><br \/>\n\u00c9s una gran batalla que tenim des de les associacions i des de la Federaci\u00f3. Els cel\u00edacs no tenen cap tipus de medicament; per tant, la seva \u00fanica manera de gaudir de salut i benestar \u00e9s cuidant l&#8217;alimentaci\u00f3. Tampoc no reben cap tipus de prestaci\u00f3 o ajuda econ\u00f2mica. Davant aix\u00f2, el moviment que es du a terme a nivell estatal \u00e9s intentar reduir l&#8217;IVA dels productes, ja que entenem que la ind\u00fastria fa una inversi\u00f3 elevada i ha de dur uns controls molt rigorosos per certificar els productes sense gluten, i \u00e9s normal que tengui un cost elevat. Per\u00f2 a l&#8217;IVA no \u00e9s normal ni s&#8217;ent\u00e9n.<\/p>\n<p><strong>Quines altres activitats duis a terme des de l&#8217;Associaci\u00f3?<\/strong><br \/>\nActivitats de formaci\u00f3 i informaci\u00f3 arreu de les Illes, comptam amb una delegaci\u00f3 a Eivissa i Formentera i actualment estam creant una delegaci\u00f3 a Menorca. Entre les illes \u00e9s molt complicat treballar amb aquest tema, perqu\u00e8 som una associaci\u00f3 sense \u00e0nim de lucre i aix\u00f2 significa no tenir pressupost suficient per dur a terme tot el que voldr\u00edem fer. Els socis pagen una quota que ens ajuda a mantenir-nos federats i tenir el suport en una s\u00e8rie de serveis que rebem desde FACE. Aix\u00ed mateix, estam creant relacions i vincles amb diferents conselleries que ens poden ajudar a sobretot conscienciar a la societat que la celiaquia \u00e9s m\u00e9s com\u00fa del que sembla i que afecta molt a la restauraci\u00f3 i hoteleria; per tant, cream constantment protocols i projectes per dur endavant aquesta sensibilitzaci\u00f3 que ens fa tanta falta. Per altra banda, tamb\u00e9 duim a terme diferents activitats per als socis i moltes vegades obertes a tothom, com est\u00e0ncies a hotels, trobades de germanor, cursos de cuina aptes per a cel\u00edacs, etc. A m\u00e9s a m\u00e9s, tenim un inter\u00e8s especial en la ind\u00fastria balear, per aix\u00f2, treballam cada dia m\u00e9s perqu\u00e8 aquests productes siguin aptes per als cel\u00edacs.
