{"id":70848,"date":"2015-02-24T20:25:56","date_gmt":"2015-02-24T19:25:56","guid":{"rendered":"https:\/\/gastronomicament.cat\/troben-altes-dosis-additius-als-preparats-de-carn-capolada"},"modified":"2015-02-24T20:25:56","modified_gmt":"2015-02-24T19:25:56","slug":"troben-altes-dosis-additius-als-preparats-de-carn-capolada","status":"publish","type":"post","link":"https:\/\/gastronomicament.cat\/es\/troben-altes-dosis-additius-als-preparats-de-carn-capolada","title":{"rendered":"Troben altes dosis d&#8217;additius als preparats de carn capolada"},"content":{"rendered":"<p>L&#8217;Organitzaci\u00f3 de Consumidors i Usuaris (OCU) ha detectat un alt nivell d&#8217;additius, pres\u00e8ncia d&#8217;altres esp\u00e8cies de carns (porc i au), carns de baixa qualitat i higiene deficient en alguns envasos de 22 marques de carn capolada de bov\u00ed i preparats de carn capolada adquirits en supermercats i hipermercats.<\/p>\n<p>En l&#8217;estudi duit a terme per OCU, s&#8217;ha analitzat la qualitat de la carn, el contingut en greix, aigua o col\u00b7lagen, i la pres\u00e8ncia de pat\u00f2gens o bacteris que assenyalen una higiene deficient. A m\u00e9s s&#8217;ha analitzat la pres\u00e8ncia d&#8217;altres tipus de carns (cavall, au o porc) en nivells superiors als permesos per la lei.<\/p>\n<p><strong>Carn capolada i preparats de carn capolada<\/strong><br \/>\nA l&#8217;estudi comparatiu de OCU, s&#8217;han analitzat dos productes diferents, per una banda carn capolada de bov\u00ed, i d&#8217;altra banda preparats de carn capolada coneguts tamb\u00e9 com \u00abBurguer meat\u00bb. La difer\u00e8ncia entre tots dos \u00e9s que mentre que a la carn capolada no es poden afegir altres ingredients (com hortalisses, cereals i aglutinants) en la categoria \u00abBurger meat\u00bb si que \u00e9s possible afegir-ne, la qual cosa fa que la seva categoria comercial sigui inferior i, en teoria, el preu. S&#8217;han analitzat 3 marques de carn capolada i 19 marques de preparats de carn capolada o \u00abBurguer meat\u00bb i aix\u00f2 \u00e9s degut perqu\u00e8 la gran majoria de l&#8217;oferta disponible als supermercats correspon als preparats de carn capolada.<\/p>\n<p><strong>Qualitat. Additius, sulfits i colorants en exc\u00e9s<\/strong><br \/>\nDels resultats de les an\u00e0lisis efectuades per OCU es despr\u00e8n que en algunes mostres hi ha moltes defici\u00e8ncies en la composici\u00f3 del producte. La pr\u00e0ctica totalitat dels preparats incorporen sulfits. Aquesta subst\u00e0ncia s\u00f3n al\u00b7l\u00e8rgens que en algunes persones pot produir reaccions adverses si no es respecta la quantitat m\u00e0xima recomanada. L&#8217;OCU adverteix que s&#8217;hi afegeixen additius i colorants en exc\u00e9s, que aconsegueixen millorar l&#8217;aspecte del producte fins i tot quan est\u00e0 molt propera la data de caducitat ,o fins i tot, el producte es troba ja en males condicions, cosa que pot ser perill\u00f3s per als consumidors.<\/p>\n<p>El percentatge de greix \u00e9s molt elevat arribant en algun cas a superar el 22%. Nom\u00e9s 5 dels paquets analitzats obt\u00e9 una bona o molt bona nota. D&#8217;altra banda, la pres\u00e8ncia de col\u00b7lagen indica que s&#8217;han utilitzat talls de baixa qualitat comercial amb abund\u00e0ncia de tendons. Tot i que en els preparats no hi ha un l\u00edmit legal aquest percentatge, en algun cas arriba al 32%, la qual cosa denota una baixa qualitat.<\/p>\n<p>L&#8217;OCU crida l&#8217;atenci\u00f3 sobre el fet que, tot i la baixa qualitat, el preu d&#8217;alguns productes \u00e9s molt elevat, en alguns casos hi ha preparats \u00abburguer meat\u00bb m\u00e9s cars que la carn capolada. Un cop m\u00e9s es posa de manifest que el que sembla barat pot no ser-ho tant. A m\u00e9s una legislaci\u00f3 laxa i un etiquetatge de vegades incomplet i engany\u00f3s indueixen a confondre el consumidor entre el que \u00e9s carn capolada i preparats industrials que tenen molts altres ingredients.<\/p>\n<p><strong>Bov\u00ed i altres carns<\/strong><br \/>\nA l&#8217;estudi, l&#8217;OCU ha comprovat mitjan\u00e7ant an\u00e0lisi d&#8217;ADN la pres\u00e8ncia d&#8217;altres esp\u00e8cies. Nom\u00e9s a 7 de les mostres analitzades no s&#8217;han detectat traces d&#8217;altres esp\u00e8cies (au i porc). En canvi, a 13 casos, s&#8217;han detectat traces o un percentatge inferior a l&#8217;1% que arran de l&#8217;esc\u00e0ndol de la carn de cavall \u00e9s el percentatge a partir del qual es considera que no hi ha frau. Aix\u00ed i tot, en els dos casos se supera aquest percentatge.<\/p>\n<p>No s&#8217;hi ha detectat pres\u00e8ncia de carn de cavall. Una bona not\u00edcia que d\u00f3na idea que la ind\u00fastria ha refor\u00e7at els controls arran de l&#8217;esc\u00e0ndol de la carn de cavall denunciat per l&#8217;OCU.
