Com requerix d&#8217;una cocci\u00f3 de dos o tres hores com a m\u00ednim, podeu accelerar el proc\u00e9s, fent-ho amb l&#8217;olla expr\u00e9s. Una vegada ben bullida, coleu i reserveu el caldo. El treball m\u00e9s labori\u00f3s ve ara ja que, abans que es refrede del tot, hem de desossar la carn i tallar-la en trossos xicotets. Despr\u00e9s, peleu i picau els alls, peleu i talleu la ceba en trossos xicotets. Lleveu la pell de la botifarra i el xori\u00e7o i esmicoleu tot l&#8217;embotit. A continuaci\u00f3, escalfeu l&#8217;oli en una cassola de fang i sofregiu la ceba i els alls. Quan comence a agafar color, afegiu-hi l&#8217;embotit. Sofregiu-lo. Tamb\u00e9, afegiu-hi la tomaca fregid i mescleu-ho b\u00e9. \u00c9s el moment d&#8217;afegir la carn, els cigrons olles i l&#8217;arr\u00f2s. Quan comence a bullir altra vegada, tireu colorant i sal i deixeu-ho coure a foc mitj\u00e0 uns 20 minuts fins que es consumisca el caldo.
