{"id":72481,"date":"2013-09-21T23:36:28","date_gmt":"2013-09-21T21:36:28","guid":{"rendered":"https:\/\/gastronomicament.cat\/recepta\/sandvitx-dhortalisses-darrel-amb-pa-de-motllo-integral-despelta"},"modified":"2022-04-09T11:53:06","modified_gmt":"2022-04-09T09:53:06","slug":"sandvitx-dhortalisses-darrel-amb-pa-de-motllo-integral-despelta","status":"publish","type":"recepta","link":"https:\/\/gastronomicament.cat\/es\/recepta\/sandvitx-dhortalisses-darrel-amb-pa-de-motllo-integral-despelta","title":{"rendered":"Sandvitx d&#8217;hortalisses d&#8217;arrel amb pa de motllo integral d&#8217;espelta"},"content":{"rendered":"<p><strong>Ingredients<\/strong><br \/>Ingredients per al pa de motllo<\/p>\n<p>per a la massa mare<br \/>\n100 gr aigua<br \/>\n5 gr sucre<br \/>\n130 gr farina de for\u00e7a<br \/>\n25 gr llevat premsat<\/p>\n<p>per a la massa de pa<br \/>\n100 gr aigua<br \/>\n75 gr llet semidesnatada<br \/>\n50 gr oli girassol o d&#8217;oliva suau<br \/>\n10 gr sal<br \/>\n50 gr farina de for\u00e7a<br \/>\n220 gr farina d&#8217;espelta integral<br \/>\n20 gr farina de s\u00e8gol<br \/>\n10 gr farina de civada<br \/>\n15g llavors de lli<br \/>\n1-2 cullerades pipes de carabassa<br \/>\nllavors de rosella <\/p>\n<p>per al sandvitx<br \/>\n1 remolatxa petita<br \/>\n1 pastanag\u00f3<br \/>\n1 rodanxa d&#8217;api nap<br \/>\n1 cullerada formatge crem\u00f3s<br \/>\npebre sixuan, sal, oli, pebre bo<br \/>\n<br \/><strong>Elaboraci&oacute;<\/strong><br \/>Comen\u00e7arem mesclant els ingredients de la massa mare en un bol. Quan tenguem una massa homog\u00e8nia la taparem, deixarem que dobli el seu volum i faci bombolletes. Amb la calor d&#8217;ara en una hora estar\u00e0 llesta.<\/p>\n<p>Tamisarem les farines i la sal i hi unirem les llavors de lli i les pipes. Afegirem a la massa mare els ingredients secs alternant-los amb l&#8217;oli, la llet i l&#8217;aigua. Amassarem b\u00e9. La deixarem tovar fins que dobli el seu volum.<\/p>\n<p>En una superf\u00edcie enfarinada extendrem la massa desgasificada amb l&#8217;ajuda d&#8217;un aprimador. No fa falta que sigui molt prima, nom\u00e9s la mesura justa que ens permiti enrodillar-la. Farem un rul\u00b7lo, enfonyarem les puntes cap avall i el posarem en un motllo allargat, millor si \u00e9s a posta per pa. Deixarem que tovi una altra vegada.<\/p>\n<p>Pintarem la superf\u00edcie del pa amb una mica de llet i hi escamparem les llavors de rosella. L&#8217;enfornarem a 200\u00baC uns 25-30 minuts.<\/p>\n<p>Una vegada cuit el refredarem, desmotllat, sobre una reixa.<\/p>\n<p>Per fer el farcit tallarem les verdures ja pelades en juliana. Les mesclarem amb el formatge crem\u00f3s i salpebrarem amb les esp\u00e8cies indicades. I ja est\u00e0, aix\u00ed de f\u00e0cil. El pa \u00e9s bon\u00edssim i la suavitat de la molla amb el cruixent de les verdures \u00e9s una del\u00edcia. Esper que sigui del vostre gust.<\/p>\n<p>Nota: Per coure el pa nom\u00e9s he enc\u00e8s la part d&#8217;abaix del forn.
