Se sol consumir a l&#8217;hivern, concretament en l&#8217;\u00e8poca de Carnestoltes i Quaresma, i generalment coincidint amb una bona cal\u00e7otada.<\/p>\n<p>Aquesta amanida prov\u00e9 de les zones vin\u00edcoles del Garraf i el Pened\u00e8s, comarques que es disputen el seu origen.<\/p>\n<p>\u00c9s una recepta d&#8217;elaboraci\u00f3 molt senzilla i r\u00e0pida, tan sols en la salsa \u00e9s a on invertirem una mica m\u00e9s de temps.<\/p>\n<h4><strong>Ingredients\u00a0<\/strong><\/h4>\n<p><em>Per a 4 persones<\/em><\/p>\n<ul>\n<li>1 escarola<\/li>\n<li>150 g de bacall\u00e0 dessalat<\/li>\n<li>4 anxoves<\/li>\n<li>16 olives negres.<\/li>\n<\/ul>\n<p>Per a la salsa:<\/p>\n<ul>\n<li>100 g d&#8217;ametlles<\/li>\n<li>100 g d&#8217;avellanes<\/li>\n<li>4 nyores<\/li>\n<li>4 grans d&#8217;all (escalivats)<\/li>\n<li>2 tom\u00e0quets (escalivats)<\/li>\n<li>1 culleradeta de pebre vermell<\/li>\n<li>2 llesques de pa<\/li>\n<li>Vinagre<\/li>\n<li>Oli d&#8217;oliva verge.<\/li>\n<\/ul>\n<h4>Preparaci\u00f3 de la salsa<\/h4>\n<ol>\n<li>El primer que fareu ser\u00e0 escalivar els tom\u00e0quets i els alls. Per aix\u00f2, embolicau tant el tom\u00e0quet com els alls en paper de forn i feis-ne bossetes i posau-les al forn fins que es coguin (seran cuits quan vegeu que la pell del tom\u00e0quet s&#8217;arruga). Tamb\u00e9 podeu rostir-los sense necessitat d&#8217;embolicar-los. Amb l&#8217;escalivat, el que s&#8217;aconsegueix \u00e9s molt m\u00e9s sabor en els plats.<\/li>\n<li>Torrau lleugerament les llesques de pa.<\/li>\n<li>Picau la fruita seca fins a obtenir-ne una textura de pols.<\/li>\n<li>Escaldau les nyores i pelau-les. Quan estiguin cuites, afegiu-les a la picada.<\/li>\n<li>A continuaci\u00f3, afegiu-hi els tom\u00e0quets i els alls, el pa trossejat i ho passau-ho tot per la batedora.<\/li>\n<li>Afegiu-hi una mica d&#8217;oli i vinagre.<\/li>\n<\/ol>\n<h4>Preparaci\u00f3 de l&#8217;amanida<\/h4>\n<ul>\n<li>Agafau una safata per a servir i rentau i trossejau l&#8217;escarola.<\/li>\n<li>Esmicolau el bacall\u00e0 i repartiu-lo tamb\u00e9 per la safata.<\/li>\n<li>Finalment, afegiu-hi les anxoves i les olives i abocau-hi la salsa de romesco.<\/li>\n<\/ul>\n<pre>Imatge:\u00a0Getty Images<\/pre>\n","protected":false},"excerpt":{"rendered":"<p>El xat\u00f3 \u00e9s un dels plats tradicionals catalans m\u00e9s populars.
